But basically it's as below:<br /><br />Marinate prawns (shelled if preferred), squids, and firm white fish slices with some oregano, thyme, parsley and sea salt, for about an hour.<br /><br />Heat up some extra virgin olive oil and drop in some crushed garlic cloves.  When garlic is slightly browned, add the marinated seafood to stirfry (gently) on medium high heat until just almost cooked.  Add some white wine and cook through till liquid is reduced to about half.  Remove seafood and liquid, set aside.<br /><br />Heat up some more olive oil, add in a few more crushed garlic cloves, and this time use it to fry the diced vegetables - bell peppers, zucchini, etc and lots of tomato (from about 5 or 6 big sized well-ripened ones).  The tomato gives the rich red colour and texture to the stew.  Fry the vegs until the tomatoes are soft and mushy.  Add some white wine and water and bring to a boil.  At this point, can also add a few spoonfuls of canned tomato paste (or even tomato pasta sauce if you don't have tomato paste) if you want the stew base to be more reddish and \"textured\".<br /><br />Add the cooked seafood and bring to boil again, season to taste with sea salt and some freshly ground black pepper.  Add in more dashes of dried herbs if you prefer and gently stir through.  Serve piping hot.<br /><br />(I fry the seafood &amp; vegs separately becos they cook in different times and I dun want the seafood to get overcooked or appear too \"mushy\" when stirred together with the vegs.)<br /><br />(Dried oregano has the very \"Italian\" &amp; \"Greek\" kind of flavour, and we like it so we add rather more.  But it does have a slightly bitter taste, so be careful with it in the beginning.  Can always add in more dashes of it at the end if you want.)<br /><br />(Can also add clams, mussels, scallops)<br /><br />(You can always use the pre-mixed Italian Herbs (eg. from Masterfoods), if you don't want to get the various kinds of herbs separately.)<br /><br /><br />ps. DS gets fastfood treats from his daddy on some weekends after some exercise usually swimming, cycling or badminton. <br /><br />With me DS has to eat fruits, vege and drink soup. He is fine eating those but still prefer fried chicken and fries. Typical 'mini daddy'. At home I try not to serve DS fried chicken too often.
