Then add the crab pieces, light soya sauce &amp; sesame oil. Stir-fry a while before adding water, after which fry the crab until it is red &amp; cooked. A rather daunting task sometimes. 1 kid likes fish the other doesn't, hubby likes spicy stuff, kids cannot take stuff that are too spicy. You prefer a lighter touch, DH prefer a heavier hand with spices. So how?<br /><br /><br />For me, I cater to the kids first then DH. My own preference takes a back seat. Yes we might argue that our partner's taste preference is unhealthy but it is better for us to put in that little bit more salt/spice then for them to go for that pack of instant noodles or eat out. It takes time to train the tastebud. So start with what they are used to and slowly bit by bit, reduce/increase the amount of the undesired/desired ingredients.<br /><br />So far, DH will still eat whatever I/my helper will cook. He will give some comments but still polish off whatever is in front of him. Over the years, he has gone from 2 heaping bowls of rice, lotsa processed food and butter, coffee and tea with sugar &amp; full cream dairy products to less then a bowl of rice, coffee and tea kosong, very little butter and processed food and low fat dairy products.</blockquote></blockquote>I don't mind DH eat out if he don't find the food I cooked is suitable for his taste bud. Been more than 10 years already. For oxtail stew, I used to use the pressure lid, high setting, all of it gets really tender like HK 'ngau lam' in 45 minutes.<br /><br />The best is that with AMC, steamed fish always turns out done just nice. My mom adds taucheo. Mrs Leong Yee Soo's version must blend a lot of ingredients lah... sometimes I cheat with Singlong chili crab sauce from a bottle but that is too spicy for my liking. A nice chili crab gravy must be spicy, savoury, sweet and piquant at the same time. Don't like to cook 3dishes + 1 soup, fry fish &amp; deep-fried dishes bcos of oily floor &amp; lots of pots, pans &amp; plates washing up (even tho it's done by my mum when my parents joined us 4 dinner, or DH).  So usually, I'll focus on cooking 1 main dish then toss a salad.
