I switched to brown rice abt 6 months ago. Naturale organic brown rice is easily accepted even by my very picky girl. Very easy to cook, no need to soak, no need to add additional water. Can cook on my usual rice cooker. After my successful switch to brown rice, I thought I would save money by switching to NTUC brand brown rice. But the texture was very coarse and there was a very strong brown rice smell (erm... dunno if you all know what I mean).... it was very difficult to eat, even after I soak for 1 whole day (from morning to evening). I donated the remaining bag of the brown rice as nobody at home will eat it (yes I know, very picky eaters). Then i decided that since we don't eat a lot of rice anyway (only cook 1 cup per meal), might as well stick to Naturale.
I buy NTUC brand Australian sushi rice cos I cook that a lot. I use this to make sushi, onigiri, teriyaki rice. I also use this to cook chinese porridge as I find that the texture of the porridge is a lot better. I know real Jap rice is a lot tastier, but I find the price is really too high, even much higher than the Naturale brown rice.

Reply to Brand of rice on Sat, 20 Jul 2013 17:10:14 GMT

I have a complicated mix when it comes to eating rice. No need to soak the red and brown rice ( I needed to soak for an hour for other brands and still the picky eaters would complain). Just cook on " brown rice" setting in rice cooker. I was taught 1.5:1 of water:rice. I find the rice too grainy. If I use more water, the rice gets soggy but still not fluffy. I was using different types of rice overseas so need to figure out how to cook the rice here.

The norm is equal parts of water and rice. I like to put slightly more water as I prefer softer and fluffy rice. The grainy rice you achieve despite using 1.5 ratio of water is probably due to the type of rice you use. You must have bought 老米 instead of 新米. Those cheaper brands from NTUC are the worst.

By the way, I use a saucepan to cook my rice as I find it tastes much better and I do not like the non-stick covering on the pot of rice cookers. Better still use a claypot as it does not make your rice stick to the pot and prevent waste. That's the feedback I get from my neighbour but I haven't tried it out myself.

teaberry

Reply to Brand of rice on Thu, 18 Jul 2013 08:23:16 GMT

I have tried various brands of rice from NTUC housebrands to premium brands like Golden Pheonix (金鳳）, Royal Umbrella and Songhe rice.

We used to like 金鳳 rice as it was truly good premium grade. However, since last year, its fragrance has changed and the rice appears yellowish when cooked. Many of my friends who are ardent fans of this rice thought so too and like me, they switch to other brands.

I now stick to Songhe as I find it supersedes the other brands of rice in terms of quality and fragrance. Good rice should have a good fragrance once you open up the sack. That’s what I call 香米. Of course, Songhe is steeper in price compared to the rest but the rice does the price justice.

I sometimes mix my rice with organic brown and red rice. I also add in a handful of millet seeds.

To he honest, organic brown rice tastes so much better than white rice, not forgetting its great nutritional value.
