Have come across articles that if take too much fruit juices (not even referring to the artificially flavoured ones) can cause a spike in sugar level. I think like part of turnip family.<br /><br />I sliced it thinly and lightly fry with the diced onions, chopped garlic, cinnamon stick when cooking borscht soup. Be careful when handling it as it might stain your clothes and chopping board. So wash/rinse chopping board after slicing the beets.<br /><br />Oh, read online that if you take too much beets, your p**p might turn red too. Don't panic as you are not bleeding. It's just the beets.<br /><br />Borscht soup is best eaten the next or 3rd day. Let the ingredients work its magic in the pot overnight. So, it's perfect for working moms like me. I like to cook this on Sunday, let it cool and store in fridge. Just make sure you don' buy turnip. Bought the wrong one once as they were placed next to each other (look similar when they are clingwrapped).<br /><br />Peel the skin away as you would potatoes.<br /><br />I don't use beets for juicing but to make Borscht Soup. You cook it like you would for beef stew and add 1 whole beetroot (thinly sliced) and maybe 1/2 cabbage (finely chopped). You can add sour cream to the borscht soup, but I like to substitute the sour cream for home made yoghurt for healthier dining options.<br /><br />The beetroot gives the borscht soup a natural sweetness and makes for a hearty meal.
