Very easy to make. This one's on Portobello Mushrooms  :lol: <br /><br /><br />1. Line baking tray with baking paper (big piece of paper as you need to wrap the mushrooms with it later)<br /><br />2. Lay some portebello mushrooms on the lined baking tray (does not matter if you get the big or small mushrooms - depends on your preference and what is available at the supermarket/ market)<br /><br />3. Drizzle virgin olive oil over the mushrooms <br /><br />4. Sprinkle a pinch of sea salt<br /><br />5. Sprinkle shredded mozerrella cheese over the mushroom (this step optional; can omit if u don't want cheese. It will still taste just as good)<br /><br />6. Put a spring of herb (your preference, it can be rosemary, tarragon or omit the herb if you wish. My personal preference is rosemary but really, it's what tickles your taste buds)<br /><br />7. Fold paper and wrap the mushrooms with the baking paper until it forms a \"parcel\". For info, make sure that ends of the baking paper is folded down and under the mushrooms. <br /><br />8. Pop into the oven at 180C for about 20-30mins.<br /><br />9. Unfold the paper gently. The mushrooms cook in its own juices and there will be a layer of mushroom juice which you can spoon over mash potatoes or roasted meats or even rice/pasta.<br /><br />10. Serve and enjoy  :drool: <br /><br />ps... you can also use aluminium foil instead of baking paper. Some kids may not like a \"herby\" taste, so can omit the herbs if u wish.<br /><br />Actually, I got the recipe from watching one of the Rachel Ray's shows. She uses a lot of EVOO in her cooking. <br /><br />I've also heard that EVOO cannot take too high temperature/heat. Not sure what is the smoke point or base limit for olive oil, so I did a quick search online just now, and it said the smoke point is somewhere in the range of 180C to 240C before the health properties get destroyed. <br /><br />Anyway, when I bake the sweet potatoes and eggplant, I usually set the temperature at 160C. It takes very little time to prepare and cook them.
