I know that some people like to scrub salt on red meats before blanching, but I was told to do the same for chicken meat as well. I scrubbed, and the chicken meats turned whitish and ‘untidy’ on the surface. Not sure if it’s the right thing to do.

Rinse the seaweed before cooking??? Didn’t know about that. That auntie from the wet market provision stall told me never wet the seaweed before cooking. No wonder I’ve been feeling yucky eating seaweed even though I love seaweeds. When I have cravings for it, I dumped the Japanese seaweeds that come in sachets into my soup. I saw those YTF stalls in the food court, and the seaweeds were dried, that’s really causing some confusion for me.

mocharita

Reply to Yong Tau Foo on Mon, 05 Apr 2010 02:21:00 GMT

mocharita:
[I must try out with using chicken breast for stock and it’s healthier.
