        L-earners, I am no ε‰θΎˆ but I have tried breadmachines, hand-kneading and no kneading, straight dough, pre-fermented dough, water-roux methods πŸ˜„


        For hand-kneading :
        For butter : best soften to room temperature and add it after dough ball is formed. If you add the butter too early, it will bind on the yeast and affects fermentation
        For eggs/milk : I use room temperature or cold. I normally dissolve my instant yeast in the liquid so if the liquid is too warm, I am afraid the yeast will be 'killed'. If you are using part water with the yeast and dough then adding warm milk later, maybe worth an experiment. Same theory as water roux (gluten gelantinization), if it works, the texture of the bread should be fluffier.

          How about cheese? When do you add cheese in & how much? I tried to make cheese bread over weekend using z machine but not much cheese taste. only got its fragrance.

            You used the Z machine recipe? I have not tried cheese think will put more cheese if taste not strong. Think cheese must put after the beep sound just like chocolate chips.

                Z machine doesn't have the recipe for cheese bread leh. Anyway, for first attempt , I daren't put too much (in fact I think I put too little in the end!). I added it together wth the rest of the recipe, ie. right at the start, cos there is no instructions on when to add cheese. I reckon it is like butter so added it together with butter. 🀷

                The cheese I used was cheddar. My bread turned out like a normal one. I was hoping to get the same effect as Breadtalk's Earthquake cheese, yum yum. Anyone got suggestion for a better cheese to use?

                      Chocolate nutella loaf πŸ˜‰ (originally fm HHB)


                      I baked this delicious soft bread this afternoon, tweaked the recipe a little : (1) i omitted the instant coffee granules; (2) added 1/4 cup of choco chips; (3) i used milk instead of water; and (4) butter instead of oil. ok, here'r the pics :

                        My DH just bought a gigantic bottle of nutella, I might just try this out. But I am using the z machine. Would that be possible???
