        Hope everything is ok for you.

        Dinner: DH wanted fish head steamboat. Although it was super yummy, I told him no more steamboats in this crazy weather!!! I think I nearly suffered a heatstroke while having dinner!!!

          I baked this twice the past week, once for lunch and another for dinner.
          i like the addition of tumeric!
          it is different from what i usually do.
          mine is the usual honey and pepper recipe.
          and i dont know why i always bake at a higher temp.
          after seeing ur post , i try bake at 190 deg, and it turned out to be much better ..

                for baking abt 10 chicken wings,i normally set 180C for abt 15mins.If u worry dry out,u can put more gravy....

                  1. Chinese spinach in soup
                  I first boil a small pot of soup leftover from previous dinner (meatball+brown button mushrooms). Then stir fry the Chinese spinach, add a little seasoning. Dish up the veg in a shallow Corningware, sprinkle a few wolfberries, pour the hot soup on the veg. Ta ta : restaurant style Chinese spinach in superior soup πŸ˜‚

                  2. 艾草炒蛋
                  The boys did not like this, end up I finished the whole dish.

                  3. Bud's fried fish
                  The fish fillets I bou though fresh have no nice fish taste. I did not marinate the fillets, think I should hv. The batter was very unusual. I used another brand of corn flour, added an egg and some water, used a whisk to mix tge. The mixture was watery dripping, so I added more corn flour. Still watery dripping. But when I whisked it, I could feel that it was sticky. I used a spoon to scoop up, it was sticky to touch but watery dripping. Weird. Anyway, I used the batter to coat the fillets. It coated the fillets well. My new Scanpan non-stick sautΓ© pan works very well. The fillets were browned nicely, I did not need to use too much oil. I do not hv Bud's sauce recipe, so I served with ketchup. The boys like this fried fish.

                  If the fillets are good, I believe this dish will be fantastic with a recipe for the sauce.
                  Wow, how does the ai cao taste? Hrd it s very good for women to relieve body wind. Can share how you cook it? Think I should get some to fry for myself for lunch πŸ˜„

                  I used chicken drumsticks the 1st time, also nice, not too dry. Can use as a side dish for nasi lemak πŸ˜„

                  The original recipe didn't call for plain flour, hehe, I just huntum. Read somewhere cake flour is lighter, can yield crispier texture. Yet, some use self raising flour. Or plain flour + baking powder. So I tried these few, and found self raising flour seems to be have the crispest skin.

                  I tried 190 for about half an hr , then use tongs to flip the wings over, bake till brown. I placed the wings on rack, over a tray lined with aluminum foil to collect the oil. The wings must not swim in oil, else it ll be oily and not crispy.
                  The downside is scrubbing the rack.
                  I saw happyhomebaking blog on grilling Saba fish, she lined the rack with baking paper and poke holes in it for the oil to seep through to the tray. Very good idea!

                  I ve also tried marinating with curry powder, salt and pepper. Or the Kentucky fried chicken premix flour. Think the longer you marinade the more lu4 wei4 it ll be. πŸ˜„

                  Tonight s dinner :
                  1) stingray grilled with balchan chilli on banana leaf,serve with lime( haven't check stock in market yet) . Balachan chilli is bought from young tau foo stall.
                  2) giant brand roast chicken for non chilli eaters,
                  3) sweet pot leaves with dried silver fish
                  4) winter melon pork rib soup with lao3 chai4 por4

                  Haha dora1, I m the crazy one who loves steamboat in this panas weather

                  I take it as a time to clean out the freezer πŸ˜‰ . The kids are the happiest, cos they ll get to 'cook' their on food.

                        艾草炒蛋 think the 艾草 is a bit too old, hence the taste is quite strong. I fried this dish the same way as chives with eggs or spring onions with eggs.

                        The Chinese spinach in soup style is a change from the dry version. My children do not like century egg/salted egg. If hubby is eating, I will first fry the salted egg yolk to sandy, then add the soup. The Chinese spinach is stir fry in the normal way, just not fully cooked through. Once dish up, will pour the hot soup onto the veg and then topped with cubed century egg and cubed salted egg whites and a few wolfberries for colour and a few fried whole peeled garlic. Hubby loves it this way.

                        Will try the baked chicken wings once my elder boy finishes his exams this week.
