Here is a recipe for pineapple rolls (Nastar) that will give you melt-in-the mouth pastry combined with fibrous jam texture. You will also find step-by-step instructions, photo and useful tips at this link:

          Hi,

I bought my custom-made pineapple roll pastry press from a baking supplies shop in KL six years ago. I'm sure you can find something similar (or a smaller pipe) from any local baking supplies shop in Singapore.

\"Roll the pineapple filing one day in advance\" --> It means you can shape the pineapple filling into small elongated rolls one day in advance (and store them in the fridge) before baking the pineapple rolls. This will save you some time during the actual baking day.

          Happy Baking!! 😉

          Regards,

Yes, autumnbronze is right that phoon huat sells the roller, but whether they still have stock or not at this time is another story. If phoon huat does not have, try sun lik at 33 seah street.

Nice pineapple tarts! Can you tell me how do you make the pineapple jam even more fibrous? Is there a special kind of grate that I can purchase? Can you enclose a picture?

                  Hi 2ppaamm,

This is a special grater for grating pineapples. You can get it from any local Chinese shop selling kitchenware.

I found one plastic one in Phoon Huat, but I find it too small. Then, I realise I have been keeping one in my cupboard for close to 20 years. That one works perfectly.

So if you are more dainty, and not chor lor like me, go get yours at Phoon Huat.

                        2ppaamm,

thanks! i just realized that i don’t have a proper oven in my mum’s place, only one where i can toast bread/chix/hotdogs etc. don’t know if i can use it or not to bake this pineapple roll. i can’t use the kitchen at my FIL’s house.
