Tks all ladies for your precious advice.

I didn’t know I was hit such hard though the event is not unexpected

Well, life continues. I think it is still better for me to be occupied than to think wildly.

ME TIME now. going to bake some muffins for tomorrow’s breakfast. Estimated time needed, 30mins.

The other day, DD1 insisted on baking a cake (with some help from me). That small cake needed one whole block of butter and 1 full cup of sugar. My goodness, cakes are so sinful!

The cake turned out pretty well, not too sweet. Can’t imagine how much sugar those cakes outside selling contain?

Yes, terribly full of sugar! For baking at home, I usually cut the sugar by at least a third to a half, and it works OK. My family is used to a lower level of sweetness and we avoid outside cakes because we find them too sweet. This is for more basic cakes where the texture isn't so sensitive to changes.

your dd must be very happy to get to bake her own cake with minimal help.. yalor, you see the ingredients then you worry. but never mind la if you dont eat much. I once told dd if buy outside we eat much lesser but if home cooked/baked, we will eat a lot more, so cannot afford to have same sugar/butter content. I still owe dd2 egg tarts but I am really tired..after this week then do.

As it was my DD1’s 1st attempt to bake a cake, she insisted that we follow the recipe strictly, I am not allowed to cut sugar level etc. 😂

For today’s muffins, I only used 3 tablespoon of sugar but I included chocolate chips. The other half of the batter, I added orange essence (not too healthy) plus cranberries.

Nice read about sugar and cake texture.

Yes, very happy. She wanted to whip her own frosting but I said to do it another day. Cos I don’t know how to do it myself. 😆

Now the buttermilk is sitting in the fridge. Not sure what to do with it. Any suggestions?

lee yl, I used to waste those creams…so try not buy things like whipping cream.

for buttermilk i will use substitute of vinegar/lemon juice with freshmilk…you can google for it. buttermilk can be used for chocolate cake.

son touched down early this morning. we picked him up from T1 and then went to Toa Payoh...local food 😉

I don't usually eat chocolates...but Royce sakura is really good. it's S$11...slightly cheaper than Singapore.
didn't expect my son to be such a good shopper...but he really bought something nice for everyone.
