      Am baking egg tarts..dunno why the tarts dough so dry leh so difficult to mould..happened to use another brand of olive oil..tired frkm standing now resting my leg.
      I use salted butter for my egg tart dough leh, didn’t know olive oil can be used as a healthier substitute? Ya maybe the brand makes a difference...

      Btw I discovered my egg tart cases/moulds from Phoon Huat had some bad discoloration after 3-4 times of use. The metal had some black oxidation spots & even some rust-coloured spots too! Disappointed & don’t dare to use it again. Can’t imagine eating the poisons. Do u know where I can get better quality egg tart cases?

        slmkhoo: 3 days/ But what is your time of arrival and departure from Hangzhou. You may have very little time left in Hangzhou, hence Suzhou should not be included. Hangzhou to Suzhou by HSR is 1-1.5h.
        Suzhou has several Tang->Qing gardens (all UNESCO WHS). It's like Kyoto, but maybe restoration-wise isn't as good as Kyoto because a lot of gardens were damaged during the Cultural Revolution, so the conservationists need a longer time and more funds to restore them to their former glory.

        At most you can cover: Humble Administrator's Garden (UNESCO), Suzhou Museum next door (designed by I M Pei) and Lion Grove Garden opposite the road (I M Pei's ancestral property), plus the pedestrianised shopping street. You won't have time to visit Taihu lake, Tiger Hill (Leaning Pagoda), the Old Street district and several other Suzhou gardens like Lingering Garden and Master of Nets Garden (which has a replica in NYC's Metropolitan Museum).

        Mrs Kiasu: Speaking of [i]youtiao[/I], I didn't know the story behind [I]youtiao[/I] until I visited Hangzhou Yue Fei Temple! For years, I had always thought 'yew zhar kuey' is a Singapore Hokkien name for [I]youtiao[/I]. Was surprised when the tour guide in Yue Fei Temple said '油炸鬼‘ in front of the statues of Yue Fei's traitors, Qin Gui/Hui and Wife. Only there and then did I learn that the 2 parallel dough-sticks symbolise the 2 'ghosts', and that 'ghost' (鬼)is a polyphone of Qin Gui/Hui (桧), the evil official, whom the locals wanted to deep-fry to eat whenever they thought of Yue Fei's death.
        Thanks for the info! We have 3 full days - arriving on a Fri night, leaving Mon night. We'll see what we can fit into the time. We're not very \"good\" tourists in that we don't necessarily want to see everything, and usually not in a great detail. We may prefer to see less in HZ and just a few things in SZ since we are in the vicinity. Might book a day trip to SZ rather than DIY. What about some of those \"water towns\"? Are they worth the travel and time?

        Kyoto - I haven't been to Japan other than a short official trip in the early '90s which was confined to seeing only a couple of \"official\" places in Tokyo. My husband has only seen the transit hall of Narita! I guess we'll head that way one day, but not sure when.

          I have extremely high myopia and am at high risk of retina detachment. One preventive measure is to go for annual retina checkups (i.e. you need to dilate the eyes), and if the ophthalmologist spots a small tear or bleed in the retina, or thinning out at certain portions, they will laser to reinforce the retina (machiam like hammering a nail into the wall to prevent the whole retina from detaching.)

          Best to cut down on sugars to prevent any onset of diabetes.
          Be very alert to symptoms, as time is of essence when repairing a retina detachment and how much sight one will recover. If you see flashes, blocked out vision, if words on a page are no longer straight and turn wriggly, please get the eyes checked ASAP. There is no pain or discomfort but please do not ignore the signs.

          What triggers retina detachment - I don’t know whether you have read Dick Lee’s story - his retinas were detached when dancing/gyrating. Imagine having your eyes bounce non-stop within the eye sockets. In short, avoid roller coasters, jerky dance movements, sometimes a mega sneeze can trigger retina detachment too. I was also advised to opt for C-section in case the strain of natural birth causes a retina tear/detachment.

          Those who require cataracts surgery and have thin retinas, best to have cataract surgery with a retina specialist as they know what special precautions to take.

            I used those metal tart cases before..have same problem so never used them now. I m using those cupcakes silicone mould from Ikea..I hope silicone has no problem in the long run.. bake 27tarts fitted nicely in 1 tray.. put egg tarts in closed container in fridge can eat over few days.

            yeah I modified the recipe changed to 100% olive oil..it will be too dense to some but our family got used to this kind of texture..on some different olive oil used, taste can be abit diff too.. I saw ppl buy ready made tart cases from PH ..super convenient .

                what range is consider high myopia for adult n kid?

                  Generally, I think above 1,000 degrees is considered high myopia. But there is another key factor - i.e. how thin or thick one’s retina is (just like corneas, you can have thin or thick corneas). If your myopia is high, but retina is thick, then you are I guess, not as high risk as one who has high myopia and thin retinas. Some people’s myopias are not high, but their retinas are very thin.

                    Museums in China generally close on Monday. I missed the IM Pei in Suzhou becos of this but the Humble Administrator Garden was open on Monday. Given you have 3 days and intend to do Suzhou, skip the water towns. In Suzhou the Panmen Gate area, the canals and tall bridge is similar to a water town. For Hangzhou we had fun taking the local bus from Longxiangqiao to Lingyin Temple. It passes Broken bridge and Yue Fei temple so its quite scenic.
