Dunno leh I baked them for like 15-20mins at about 180 deg. Maybe over ambitious with the pineapple so the crust too thin and during baking the pineapple expanded resulting in cracked crust. Could also be the skill in wrapping the pineapple and rolling the dough thereafter. Noticed that those I wrapped did not crack as much as those that DD did.hi funz

the enclosed ones which i baked yesterday, all have finished :lol:
my enclosed ones din crack leh but still melt in the mouth.
just that they are very soft, so they breaks easily when being picked up.
isit becos yr baking time is slightly long ? which results in drying ??
Mine when it is still hot it crumbles easily. But once cooled it's easier to handle.
Just done with my batch of sugee biscuit over the weekend so now on to almond biscuits, next will be pineapple tarts or rather balls. We'll see how it turns out this time. -

i think not so much on skill of wrapping, becos all the round ones were made by my gal, dun think she used much skill.....haha
it is much easier to made the round ones,
as for the open-faced ones, after mould cutting, it get stick to the board, very hard to pick them up.
ya, when it is hot, it crumbles easily when i tried to remove from the baking tray, so spoilt quite a few.
but if i were to let them cooled down first, they seem to stick to the baking tray, also hard to remove.

The sugee biscuit..... yum of course. Cannot go wrong with my mum's tried and tested recipe. Smells totally yucky when you are rolling the dough because of the ghee but once baked..... heavenly. Smooth, buttery, melts in your mouth. So far, cannot find any that can compare to those that my mum makes. And well, now those that I make. Heheh.
It is actually the easiest to make which is why I start with that first. -

Went to chk out the BC's cake premix again. Cnfm need to use an electric mixer. Most of them requires to mix at medium speed for some secs while some requires from slow to medium.

I've got no problems with sharing recipes. But must warn hor, it is my mum's recipe so a lot of argalation. A lot of it is base on our sense of touch to feel how soft or dry the dough is and we adjust a bit here and there.
500g ghee (2.2cups)
2lb flour (4 cups)
14oz powder sugar (1 ¾ cups)
I am using a convection oven so I bake the cookies at 160-170deg for about 20mins. Must keep an eye on it to make sure it does not turn brown. -

Seriously, no need mixer if you are making a small batch. When they say to mix at certain speed the purpose is to cream the butter or beat the eggs. All these can be done using a wooden spoon for the butter or whisk for eggs. A friend of mine actually used her juice blender to whip up basic cakes.
Having a mixer just makes the process a lot easier and faster. If you are into baking, why not go get a mixer, those basic ones like Philips don't cost much. -

No need mixer. I've been making Betty Crocker mixer cakes for 10 years and have never used a mixer on it before. When my dd was 8 years old she was making the cake all by her self using just a large bowl and a spatula.ppnqq:

1tsp baking powder
1.5 tsp soda bicarbonate
I didn't give detailed instructions huh. No special procedure. The usual cookie making method. Cream the Ghee and sugar and add in the flour gradually. And as usual, I will reduce the sugar to about 1 1/4 cup but that is because I do not like sweet stuff. Once the dough is ready, pinch desired qty and roll into balls.
