Sorry just realise that when I cut & pasted the recipe missed out the following
1tsp baking powder
1.5 tsp soda bicarbonate
I didn't give detailed instructions huh. No special procedure. The usual cookie making method. Cream the Ghee and sugar and add in the flour gradually. And as usual, I will reduce the sugar to about 1 1/4 cup but that is because I do not like sweet stuff. Once the dough is ready, pinch desired qty and roll into balls.
i bot the qbb ghee, and the PH's lady told me that i needed semolina flour for sugee in order to get the right texture......
so i bot it too....(just in case i need it)
btw, what flour do u use ?? do u mix the 2 or just 1 type will do ??
now.....think i have to do some googling to find out the ratio of plain flour to semolina flour

We use semolina flour in our Sugee Cake along with bits of almond but not in our biscuit. Mum's recipe does not call for semolina flour. Hers is modified over the years. She uses only plain flour. I am not sure how the ratio goes if you want to add semolina flour. There are many versions, those that adds vanilla essence, almonds, etc. So far my family prefers this simple recipe where you can really taste the fragrance of the Ghee.

i am home today too, so i was thinking of experimenting it in the afternoon,
but after googling the whole morning, still unsure of the ratio,
as there are quite a few of diff ratio......
maybe i shdn't buy.....then i 'll just go ahead yr recipe without the semolina flour. -
Silly stupid me.
My 1st batch of almond cookies turned out super crunchy instead of crumbly and I could not figure out why. So today I thought I will bake another batch. While weighing the ingredients I realised that I dumped double the amount of baking soda the last round. I grabbed the wrong bottle and without checking the label just spooned and dump.
Well now mystery solved but I have another problem on hand, my maid threw away my bottle of baking powder since it has expired so I have no baking powder. I was wondering if I should drive out to just buy a bottle of baking powder, then I remembered reading somewhere that we can concoct our own baking powder. So I googled. And just to let you guys know, if you ever run out of baking powder, you can make your own. Formula is
2 parts cream of tartar to 1 part baking soda.
I used that and the cookies turned out the way I wanted them. -

500g ghee (2.2cups)
2lb flour (4 cups)
14oz powder sugar (1 ΒΎ cups)
I am using a convection oven so I bake the cookies at 160-170deg for about 20mins. Must keep an eye on it to make sure it does not turn brown.
I follow yr recipe 500g ghee, and 4 cups of flour
I google 1 cup conversion = 125 g plain flour
So 4 cups= 500g
and it works out the ratio of 1:1 (ghee: flour)
but is too oily.....the cookie \"melted\" upon heating.... :roll:
i am still puzzling where goes wrong, prob must be the conversion of cups to grams.
now, i login to relook at yr recipe again.....and with some recipes from the net,
i try to adjust the ratio to 1:2 (ghee: flour)
texture looks ok now.....still baking, results not out yet
as for the semolina flour which is so coarse, hard time sieving it
also the texture is not smooth so for the 2 nd batch,
i reduce the ratio of semolina flour which i orginally used 3 :4 (fr the net)

Oh dear, I am so so sorry, I think my flour conversion is wrong.
Feel sooo bad.
So how did your 2nd batch go? Yah if you look at the proportion in the recipe, it is almost 1:2 for Ghee:flour.
My first try long time ago was disastrous as well. But cookie still edible lah.
Yah semolina flour is course, I guess that is why my mum did not want use it as she wants the smooth creamy texture. -
erm sorry to side track abitβ¦when baking the pineapple tarts, do u bake the pineapple filling together with the tarts (for the type where the filling can be seen on top)?

How did your 2nd batch of Sugee Biscuit turn out. I made the cookies with the kids at my childcare and they had a blast. Cookies turn out ok though some were a bit too burnt.
I still feel so bad giving you the wrong conversion. Did not spot the mistake as I usually go by the weight rather then the cup measurements.
