      I took the plunge this weekend and decided to make a strawberry sponge cake. DS loves strawberry anything and inspired by the many talented bakers here, I thought I will give it a go.


      I mean ok, sponge cake I know how to make, Korean strawberries are in season again, cream, well, just whip right? So I envisioned a nice white cake with cream piping and red juicy ripe strawberries adorning it.

      The cake came out fine, the strawberries were fantastic, juicy and sweet even on its own. Then came the cream. I am not a fan of creamy stuff. I dumped 1 1/2 cup of whipping cream and started whipping. Thought I will get meringue like consistancy. But no, ended up over whipping and I got butter and skim milk instead. Which, was interesting. The kids were facinated. So got rid of the 1st batch and tried again. This time I got it right. But good golly gee, I never knew how much cream was needed for an 8 inch cake. Even with 11/2 cups of cream I was not able to adequately cover the cake, could still see bits of the cake. But I balk at the thought of piling on more cream. So decided to make do with a see through kinda finishing and forget about piping patterns. DD started decorating with the strawberries and in the end decided to just dump every single strawberry on the cake. Haha. The more the merrier, her logic.

      Well today, we are left with only 1/4 of the cake. The kids and DH loved it. Me, I scrapped off all the cream and ate only the cake and strawberries.

      Conclusion, next time, the cake, strawberry and cream will come separate, ala carte. Go add them yourselves if you fancy, I will even throw in chocolate sauce. But no way am I going to assemble another fresh cream cake. I still keep smelling the cream. šŸ˜›

        Funz,

        i tried b4 using whipping cream to whip into cream,
        but somehow i dun get the texture that we found in bakery cake.
        dunno where goes wrong. :roll:

        i ever bot those in a can form, whereby u just need to press it out...
        oh......never try that again, the cream taste horrible !!! :x

          Yesterday, this was what i had baked, a \"normal cake\" with blueberries in it.

          ok, calling baking kakis, Enjoy yr E-tea time Now šŸ˜„

          don't look nice, becos the blueberries sank to the bottom,
          but taste Yummy !!!

            Finally manage to post some pics.

            Augmum, I bought the Presidents whipping cream. And yah cannot get the light fluffy consistency that you find at bakeries. I wanted to cheat and use those from the can but thought just try to whip some up myself. Lucky did not get those canned type.

              oh u're using president whipping cream,
              may i know how long u need to whip ??
              and did u need to set the fastest speed ??

                haha, u're lucky, it's taste kinda of weird,
                it's a waste of money, i threw the whole can away juz after sampling. :x

                  and did u need to set the fastest speed ??
                  Started out with the fastest speed but the cream splattered all over. So settled on speed 2 on my phillips mixer. I did not take note of the time needed, as my first batch turned to butter due to over beating, I kinda stopped when I got the consistency b4 butter with the 2nd batch.

                        the more i beat the cream, the worse the \"end result is\" :lol:
