How to wash vegetables clean yet retain their nutrients

I soak my veges as well to get rid of pesticides and to make sure any creepy crawlies hiding in there comes out, especially for veg like broccoli. Dun think much vitamins and nutrients is lost in the soaking.
only the water-soluble types , like vit B, of course not all....
so to retain as much as nutrients, not to cut veg then wash,
but sometimes i still do that. -

i use some vinegar (not too much) to soak veg for a while before rinsing them clean,
it is believed to get rid of pesticides.
when we soak veg, some of those water soluble vitamins will def be lost, can't help it....
but presence of pesticides post more danger.
besides that, vinegar has antibacterial properties, can destroy bacteria, such as Salmonella. -

as for me, i like to cut cabbage into strips first before washing, though shd do the other way round.
I also sometimes cut the veges then wash though I know maybe some nutrients will go away but then no choice like for example carrotAugmum:
so to retain as much as nutrients, not to cut veg then wash,
but sometimes i still do that.

Ya, agree, especially brussel sprouts. I once found worms in them. Eewww!!! -
I just spoke to my helper and she told me that for broccoli, she will also soak with a pinch of salt, as the salt will cause the worms, if any, to wriggle their way out.

Isnβt soaking the veg in water for about 10min enough?

Actually the white vinegar I have at home is used mainly for cleaning not for cooking. Haha, now found another use for it.

yes, there are some articles i read from health magazines stating the facts of using vinegar on Fruits and Veg.
and also i ever heard once on radio.
having said that, when i am in the hurry, i usually forget abt it when washing Veg. :oops:
except when soaking grapes, i'll remember.
