Thanks for the welcome, everyone ! :dancing:

..I first started out with my Z baking 100% wholemeal breads. But it never turned out 'nice.' It had a dense look and taste. So I experimented with the portions using bread and wholemeal flour and finally came up with a 1 cup wholemeal and 1 cup bread flour combi for the bread to turn out just nice.

What about you?? Do you bake 100% wholemeal breads??
        autumnbronze
Yes, I bake 100% wholemeal - few years ago, DH and I went on the South Beach Diet  Since then, never quite able to go back to white bread.

I have same problems as you - dense look and taste - my first few loaves look like bricks πŸ˜“ It is better now : I added (1) vital wheat gluten (2) Lecithin (instead of other fats). Last few days I have been trying to make rolls...ie dough cycle then shape the rolls but the rising is poor. Last night I tried to spread seaseme on the roll but the bun just collapsed ! Hahaha.....update me on your wholemeal baking adventure.

          Hi everyone,

Like csc, I have bought a z-machine at OG and tried baking my 1st bread. It’s a delightful experience. However, my dh commented the bread not so fragance as gardenia and the bread felt stiff on the next day.

I used bake king bread flour and 4star butter. Any advice by our ε‰θΎˆ?

          Thanks!

Tangs and Isetan Scotts carry the Kai knife too. Cheap and good. πŸ˜‰

Schweppes, they do? Hah, to think the sales person told me Kai is exclusive to Taka.

I also saw it at Isetan, Nex πŸ˜„

Alas, I log into this thread 2 days late. I had bought a bread knife from cold storage - don't think it's the kai brand and it cost me $24.90 !!! :stompfeet:

              If i had known earlier .. 😒

WCW, wow really ! That shows how old my Breville is ! Your lao shi from breadmaking class ?

LLX04, store-bought bread more preservatives so stay soft and moist longer. Try steaming your bread on day 2 to see if it helps, else try to finish the loaf within 1 day.

For those interested in getting the Baby Z bread machine, do look out for the OG promotion. So far, I think the retail price is the lowest - I think about $250 (can't remember the actual amt) as long as you purchase another item for $50. So if u need to buy something anyway, get it from OG to enjoy great savings on the Baby Z.

Was at the Tangs members' sale yesterday and the Baby Z is retailing at $388 :yikes: (and that is supposed to be the offer price :faint: ). The original price is abt $488. :yikes:
