      Giggler1:
Found someone selling 2nd hand Severin but still thinking if I shd get the Z machine. Sigh...

      Hi there,

Severin is an established brand from Germany. It is as good as the Z.

The reason why many of us go for the Z is because of space constraint. The one member here who is using the Severin does not have any complaints about it.

      Hope this helps 😄

 So paiseh....been putting off coming to here.

Bought a bread machine when we were holidaying in China in June, but took us a good 3 weeks later before baking our first bread.

For the first bread, we followed the recipe in the user's manual to the T. It was successful, and everyone loved the warm, freshly baked bread...except for my picky dad who found it too dense to his liking.

Sorry...no photo of that bread since we were all so excited of the first bread that it was all gobbled up before I can bring out the camera! 😂

After that first try, I happened to come to this thread, and found someone (can't remember who...but :thankyou:) posted this blog site: http://happyhomebaking.blogspot.com/ which eventually led me to this recipe: http://schneiderchen.de/237Hokkaido-Milky-Loaf.html

I used that recipe (proportionately reduced since my machine is only good for a 500g loaf....just like the Z) for my second loaf, and the result was as follows:

        http://i52.tinypic.com/21jy7v8.jpg\">
Didn't get the proportion right the first time...the bread rose so much that it touched the cover, causing it to be a little under baked at the top.

        http://i54.tinypic.com/11ht7w8.jpg\">
Yes, it's truly soft and fluffy! Even my picky dad loved it. So happened we cooked curry for dinner that day....锦上添花! We were destined to have fried rice the next morning.... 😉

        http://i53.tinypic.com/a3mpfo.jpg\">
DD just couldn't keep her hands off the bread.

Even though I had bought a Kai bread knife (Carrefour ~$14), I realised I have a bunch of animals at home, who prefer to tear into the bread than to wait for it to be sliced! 😂

So there...my reporting here as a newbie baker! Hope to learn from you guys, but having to go through the 540+ pages of this thread is quite a daunting task! :faint:

Agree with LKVM. My bread is always fluffy on top and more dense below. My colleague asked me just to knead the dough using the bread machine and take it out, give it a turn and bake it in the oven instead. Have not try thou. Using the breadmaker to bake a loaf is the easiest. haha.

BigDevil, for your Hokkaido loaf, how much did you reduce the recipe by? It doesn’t state in the recipe what the size is so I’m not sure how much to reduce the ingredients by. Thanks.

Are you using the Z machine? I think the Z machine's pan is similar in size as mine, so you can use the reduced proportion I worked out.

My machine's recipe calls for 2 cups of bread flour, which I figure should be about 250g. But the Hokkaido loaf calls for a total of 600g (bread flour 540g, cake flour 60g) of flour! So I worked out the ratio and came up with this:

                  Fresh Milk \t\t\t104g
                  Whipping Cream \t\t63g
                  Milk Powder \t\t13g
                  Egg \t\t\t\t1 pc
                  Salt \t\t\t\t4g
                  Sugar \t\t\t33g
                  Bread flour \t\t225g
                  Cake Flour \t\t\t25g
                  Yeast \t\t\t4g

With this, the dough still rise up to touch the cover, so eventually I used only 3g+ of yeast and didn't have that problem anymore.

:udaman: :salute: wow BigD... your bread looks yummy.. even I have the problem that sometimes the upper part for the bread will be quite fluffy and i supect cause we put the yeast last and on the top so maybe the top become more soft.. but nonetheless its good to have home made bread 🕺

Thanks! Yeah good to have homemade bread! :celebrate:

I didn't particularly notice the Hokkaido loaf to have a fluffy top with dense bottom. Maybe because it's so much fluffier than my first loaf that I didn't pay attention at all! 😂
