      Thanks for the info, pojo!

I should put in the milk/water in baking pan, start the machine, add flour slowly to stir, then honey, then salt… Add dry yeast at last step! The machine take 3hrs to finish the whole process…
      Is this normal?

Yappy, I recall the order for adding ingredients for Severin is Milk/Water, then Oil/Honey, then flour, then salt and yeast at the last step… Since you spent so much on the machine, don’t give up as yet, call the distributors and see if they can help somehow… This recipe has always worked in my Severin:

        1 cup water
        2 tbsp oil
        2 tbsp honey
3 cups bread flour (can mix in 1 cup of fine wholemeal flour to replace 1 cup bread flour)
        1 tsp yeast
        1 tsp salt

Now I use this recipe for my Breville machine and it works just as well.

I am not sure whether the Severin spoilt prematurely because my maid was carrying it up and down and damaged the motor by rough handling. Anyway, now I do not allow her to touch my Breville and it’s still doing good after more than a year.

            Hi Yappy

Looks like you are not using the timer and making the bread straight away. Just to check, what is the flour you are using? michyms recipe seems sound. Maybe try with just all breadflour.

                    Hi Yappy

The recipe I am using is basically the same as michyms’ except that instead of honey, I put in 2 tbsp of white sugar. In addition, I add a small slice of butter and a pinch of cinnamon. This gives the great smell of freshly baked bread in the morning all worth the effort.

I think you can try substituting the 2 tbsp of honey with sugar. Then you can vary the amount of sugar as this has an effect on how much the bread will rise.

I assume you made the bread straight away after putting in all the ingredients instead of setting the timer for >3+ hours.

Don’t be discouraged. Give it another go.

Yappy, I have not used the Severin but another brand bread machine.
My machine also requires similar order of adding the ingredients.

From your description, it seems the bread did not rise properly.
3hr+ from start to end is about right because there is at least 1hr+ proofing time. Peek at what the machine is doing and observe the state of the dough/bread, and let us know. It should go like this :
                      (1) mix and knead
                      (2) first rise
                      (3) punch down
                      (4) second rise
                      (5) baking <-- this is usually the last 30 minutes

You mentioned '...then salt.. Add dry yeast at last step..'. Did you dump the yeast ON TOP of the salt ? Salt will inhibit rising. When you add the salt, put in it one corner of the bread pan, when you add the yeast, put it in the opposite corner.

Don't give up..........try again ! Let us know, ya ?

Has anyone tried the 100% wholewheat bread from the recipe given by Z machine? My girl tried it yesterday and it didnt rise till the top, it was so hard and flaky. Not sure what went wrong.
