            Thanks for your kind words šŸ™‚ Snowskin mooncakes are actually quite simple to make as they don't require baking. As long as you have the right type of mould, you can make quite a number of mooncakes within an hour or two. Better than spending $50 - $60 on one box outside! Ever since I learnt how to make, I have been making them for my family and friends šŸ™‚ I can share the recipe if anyone interested šŸ˜‰

                  Thanks! I used pandan extract (very small drop) to achieve the green colour, red and yellow colouring to achieve the other two colours.

                  I got the recipe from here: http://auntyyochana.blogspot.sg/2006/09/rainbow-ice-cream-soda-snow-skin.html I modified the recipe a bit by mixing the ice cream soda with water (180ml ice cream soda, 20ml water) to reduce the sweetness.

                  I use the piston-like mould which you can get from Sun Lik/Bake King. I find these easier to use as compared to the traditional wooden/plastic moulds as my mooncakes always ended up sticking to the mould and tearing when I tried to knock them out.

                    Thanks worldangel. I noticed the recipe requires 200g of ice cream soda for the ice cream soda mooncake. In your case, it's a normal snow skin mooncake. So do I just omit the 200g of ice cream soda?

                    Also, what is tang mian fen? Can we find it at Phoon Huat / Sun Lik?

                      Mine has ice cream soda as part of the ingredients as well. I have tried recipes which only call for icing sugar but ended up with cracked skin that doesn't stay soft and moist for long. I have kept this mooncake up to 5 days and it was still soft at that time.

                      I include the ice cream soda but I only use 180g of ice cream soda but mix in 20g of water, so total is 200g of liquid (ice cream soda mixed with water). I omitted tang mien fen (wheat flour) and it doesn't seem to affect the texture much. Should be able to find in Sun Lik or Phoon Huat if you want to include.

                        1) When you omit the wheat flour, can I say you use only 90g of glutinous flour? Or do you replace the 10g to make it 100g?

                        2) Is there any prefered brand for the ice cream soda?
