Had heavy late lunch of our usual favourites at Siam Kitchen. Plus fusion berry cheesecake and double chocolate from Mac Dees. So just simple dinner of sweet potato soup with spinach, fried egg drizzled with soy sauce and IJ fish fingers plus a spoonful of sambal belachan eaten with plain rice.
      Buds,

Please share recipe for sweet potato and spinach soup. :please:

            baked chicken
            fried eggs with baked bean
            yong tau foo soup
            stir fry kailan

            served with rice

Pls share the fried eggs with baked bean recipe :please:

Baked chicken - crispy skin type? I hv problems with making the whole chicken skin crispy. Thought it could be due to not using a proper roasting pan (kungfu lousy, so blame the tools :rotflmao: )

fried egg and baked bean recipe? no need recipe. just fried some eggs and heat up the canned baked bean. then pour on eggs. done.

i didnt bake the whole chicken. just boneless chicken thigh marinated the day before. at 200C for 25 min. the skin become crispy. cut and serve.[/quote]Interesting way to serve fried eggs with baked beans. Will try it out for my children 😄

              Jennifer:

I just finished cooking 扣肉 for tonight's dinner, to be accompanied with soft bean curd, fresh shiitake mushroom later.

              Jennifer,

Which recipe did you use for the braised pork?

I modified a recipe from 原味低脂享瘦餐 Loving Kitchen by Kevin & Claire, page 128: Kevin's Low Fat Pork Leg

              What I used are:
              1. a slab of Pork belly, skin removed, portion good enough to serve 2 adults
              2. 2 stalks of scallions (cut into green and white sections)
              3. old ginger, sliced
              4. 1 pcs star anise
              5. 1 cinnamon bark
              6. garlic, sliced
              7. galangal, sliced
              8. 3 tsps rock sugar
              9. 1 tbsp sesame oil
              10. 1 tbsp dark soya sauce
              11. 3 tbsp rice wine
              12. 3 tbsp light soya sauce
              13. 1 cup water
              14. 1 tbsp white pepper

              Steps:
              1. heat up the sesame oil
              2. pan fry the pork belly on all sides until brown
              3. add ingredients #2 to #7, fry until fragrant
              4. add rock sugar, fry until melt
              5. add dark soya sauce onto the pork to make it darker
              6. add the seasonings #11 to #14, bring to a boil over medium heat.
              7. reduce to low heat and simmer for 30 minutes

I need to remove the star anise and cinnamon bark during half time as my children do not like the strong aftertaste of these.

Simmering for 30 minutes will yield not soften pork belly, the texture is still quite firm.

Before serving, I add cut soft bean curd and soft boiled eggs and turn up the heat to have the soft bean curd thoroughly heated and the eggs slightly coloured.

If your family members prefer slightly heavier seasonings, you will need to make some adjustments to the above qty.

There will be abt 2 bowls of sauce left which I will use to cook tau pok on another day.

The pork belly portion can be doubled for the same liquid ingredients. But cooking time might need some tweaking.

Pan fry. No need to finish all at one go. They have separate packaging inside. Once you take it out from the freezer, fry it immediately. It's very crunchy. Like biscuit.
