My mom's specialty...crushed cooked potato (not mashed!) + mashed luncheon meat fried with egg.

So far I have only cooked the following dishes with eggs:
Kimchi with eggs
Smoked salmon with eggs
Bitter gourd with eggs
Anchovies with eggs
Minced chicken/pork with eggs
Prawns with eggs
Eggs seem to be very versatile. Anything can be cooked with eggs.

Think no special recipe, just that my family love this dish!
If I'm not wrong, she will cook the potato together with the rice.
She'll mash and fry the luncheon met under low heat to make it abit crispy and also get the oil out. Add in the cooked potato and crush and mix with luncheon meat.
Fry the mix for a while and flatten and then add the whipped egg.
That simple!
