can i ask...how do make the cornstarch mix into stew/soup without being lumpy?
is it the fire too strong? -

oic. Many thanks
This is a very common dish in China and it varies from cook to cook. Some will have more egg, some more tomato, some have the tomato more cooked or less cooked etc. Just ask your son what is different from what he likes and adjust accordingly?Jennifer:
Does anyone hv a 番茄炒蛋 recipe?
My elder boy told me the sch canteen stall serves a good 番茄炒蛋 dish. With his limited guidance, I did the following:
1. sauté sliced garlic
2. cook the cut up tomato (with skin on) until fragrant
3. push the tomato one side in the pan, add the beaten egg
4. once the beaten egg edges start to cook, I push the egg inwards until the egg is cooked through.
5. season with pepper and salt and dish up
My boy told me the proportion of my tomato and egg is not right.
Please advise :thankyou: -

when adding the cornstarch mixture, the fire should be lowered for a while.can i ask...how do make the cornstarch mix into stew/soup without being lumpy?

I usu. make a well in the middle, add the cornstarch mixture in slowly, scooping the fluid beside it onto it n stir around quickly. Once mixed, I will give the whole pot a final stir. -

Sometimes the dish might turn out slightly more watery due to the tomatoes. When that happens, add a little corn starch.[/quote] :thankyou:

Today we ordered pizza.
I chanced upon Nestlé Singapore website, many simple recipes, great ideas. -
Now boiling beef stew. Hopefully the beef chucks r good.
Panfry mackerel fillets
Stir fry a small serving of leafy veg as the children are likely to be eating the potatoes n carrots in the stew.
Maybe steam a small serving of minced pork in case the beef chucks turn out lousy. -
Ytd dinner:
1. stir fry cabbage+prawn
2. stir fry cubed pork
3. leftover beef stew
4. steam fish fillet
5. fried egg omelette

Just came back from a hands-on cooking class @ P…S…
Disappointed.
Supposed to be hands-on 3 course - a soup, a chicken and a dessert.
Ended up only 4 stations and each station is supposed to hv 4 persons. The ingredients except the chicken parts were not really fresh - the onion and garlic were dry and the green apple were old.
Luckily 2 pple did not turn up and my station has only 3 persons including me.
I got to see how the chicken was done while I prepared the soup as these are side by side cooking. Did not get to see the dough for the tart, how the apple is cooked, kneading of dough.
The instructor could not wait for the onion to turn brown and added the wine and soup. Then commented the onion was not done enough.
If I had known a free hands-on cooking class is conducted in this manner, I wont hv signed up for it though it came with purchase of the SCANPAN products.
Anyway, the finished pdts were not to my liking. Only the scoop of ice cream served with the apple tart is good. -
Today’s dinner:
1. Steam pomfret
2. Stir fry long beans with dried shrimps
3. Stir fry bok cai
4. Grill chicken breast
5. 四神汤
