Yesterday was too excited and bought lotsa stuff from NTUC

It was quite late in the night when I finally managed to drop in my ingrediants.. I also included DH for this so that he also remain excited.. though I was very scared of the loaf getting spoiled
Ard 1 am (I had set the alaram to wake up

We had it in our breakfast it tastes yummy but the amount of salt was less actually I purposely put less
and I put olive oil instead of butter
I found the slices too big though
The bread looks good! I'm sure you didn't buy the Z machine. The loaf doesn't look like a Z loaf. Could it possibly be a Severin? I don't know. Maybe twinklejoy can idenitfy it.

Just finish reading my baking science notes about vitamin C and I got these :
Ascorbic acid (vitamin C)
It has been extablished from many experiments that the addition of a small amount (up to 100ppm) of vitamin C also shortens the time needed for the dough to mature. This is because ascorbic acid catalyses the gluten crosslinking reactions to form a more extensible, elastic, strong network.
And it serves as preservative.
I didn't find anything about vit C gives a boost to fermentation :?

Yes yes, I had 2 not so wonderful attempts at making wholemeal bread. The 3rd one was much better. Still room for improvement
