Another thing I read in my research on breadmaking is that apart from water, yeast must never be mixed with salt too and that's why the salt is always covered by the flour before the yeast is added.

Actually yeast reacts with everything for different reasons, it includes sugar and butter even... this is how powerful this little dotty powder is...
