Just came back from a hands-on cooking class @ P…S…
Disappointed.
Supposed to be hands-on 3 course - a soup, a chicken and a dessert.
Ended up only 4 stations and each station is supposed to hv 4 persons. The ingredients except the chicken parts were not really fresh - the onion and garlic were dry and the green apple were old.
Luckily 2 pple did not turn up and my station has only 3 persons including me.
I got to see how the chicken was done while I prepared the soup as these are side by side cooking. Did not get to see the dough for the tart, how the apple is cooked, kneading of dough.
The instructor could not wait for the onion to turn brown and added the wine and soup. Then commented the onion was not done enough.
If I had known a free hands-on cooking class is conducted in this manner, I wont hv signed up for it though it came with purchase of the SCANPAN products.
Anyway, the finished pdts were not to my liking. Only the scoop of ice cream served with the apple tart is good. -

First attempt at baked paper wrap chicken for tonight’s dinner. Anyone made this before?
I hv marinated the thigh n breast meat with minced garlic n onion, white pepper, light soya sauce, chinese cooking wine, oyster sauce, dark soya sauce and sesame oil.
Do I hv to use cornflour?
Got young ginger, spring onions n Chinese parsley this morning. -
I intend to place the paper wrap chicken on the roasting rack. In the roasting pan, if I place sliced eggplants, I just drizzle with some olive oil, salt n pepper. The oil drips from the paper wrap chicken will cook the eggplants. So that will b 2 items in one cooking.

Wah, I remember helping my mum prepare that when I was still in primary school. The deep fried version. That was before everyone became more health conscious. It was not something that my mum will prepare regularly, more a once in a while kinda dish and we all loved it.
One question, what kind of paper do you use for the baked version?
Tonight’s dinner will be Sukiyaki. DH is off to the airport for another business trip so it will be just me and the kids.
