How to cook nice Pasta

In the spirit of our Swensens discussions thread, I'm suggesting to Chief to

Dun even remember contributing here. Hehe.
Anyway the one I gave was creamy mushroom pasta which my kids like. not Pesto. Pesto will be only olive oil and spices.
Hereβs another one. Vongole.
Fresh Clams
Dry white wine (I usually use about 1/2 bottle for 1 pack of pasta)
1 cup stock
Garlic (sliced)
Fresh tomato (cubed/cherry tomatoes)
Basil Leaves (chopped)
Dried chilli
Olive oil
Salt
Freshly ground black pepper
Fry the garlic and chilli until fragrant, add clams and stir, add tomatoes, & wine, cover & simmer on high heat,(I usually remove the clams from the sauce at this point to avoid overcooking them) add stock, pasta and salt. Let pasta cook through. Sprinkle basil leave and black pepper and serve.
I will cook the pasta only 3/4s through in heavily salted water first and cook it through in the sauce only when ready to serve.
Vongole is usually nicer with spaghetti or angelβs hair pasta. You know those that you can slurp. -
