this recipe is like a snack on it own or you can eat it as a wrap or with meat filling to make a complete meal.
LEEK PANCAKE
Ingredients
-English leek - 2 stalk (leek stem are whiter and longer than the chinese leek)
-Any type of mushroom ( i like fresh white button mushroom or canned straw mushroom)
- some plain flour (i agar agar so dont kn how much, depend on the amount of water u used for the batter)
- 1 egg
-some lukewarm water
-pinch of salt and pepper
-cooking oil
1)sliced the leek and mushroom thinly.
2)fry it with some cooking oil til soften. Set aside.
3)mix the egg, flour,salt, pepper and water to form a smooth batter.
4)add the leek and mushroom into the prepared batter and mix well.
5)heat up a round flat frying pan, with v little oil, scoop some of the leek batter into the heated pan, spread it evenly on the pan (resemble a big round pancake)and turn to other side after about 5min. (if you like it crispier, cook it longer on both sides)
6) ta-da! ready to eat. Can keep in the fridge overnite and microwave when ready to eat.

This is what I do when I have stale plain bread. Mix minced pork and minced prawns together and marinate with salt, pepper and a dash of sesame oil. Cut bread into 2 x 2 inch squares or any bite size. Spread the meat mixture on the bread like you are spreading butter on toast. Bake in the oven at 160C for about 15 to 20 minutes. Serve with mayonnaise.
Alternatively, you can deep fry the pieces until golden brown. Another alternative to using bread is to use ready-made "you tiao". Cut "you tiao" into 2 inch lengths and make a slit in the centre. Stuff a spoonful of meat filling into the centre cavity. Bake in oven or deep fry till cooked. -

And now, my addition: Creamy Mushroom soup!
Ingredients
1 cup dried mushrooms (I think the name is porcini, not sure)
3.5 Cups Hot Water
2/3 pounds fresh mushrooms
4 Garlic Cloves, finely chopped
1/2 Cup Shallots, finely chopped
3 Tbsp. Butter
7 Tbsp. Flour
Salt, spices and pepper, for taste. Sprinkle according to how much of each you want inside, any spices ok...
4.5 Cups Stock (I use vegetbale stock, since am vegetarian, but I guess chicken stock is fine too)
1 Cup Heavy Cream
1/3 cups of chives, snipped
1/3 cup parsley, finely chopped
Directions:
In separate bowls of 1 1/2 cups of hot water, soak the dried mushroom for 30 minutes. Line a strainer with a paper towel and drain the mushrooms liquid, saving 1 cup. Drain the fresh mushrooms, and rinse well under running water, and cut off the stems. You don't need this liquid.
Wipe off the fresh mushrooms, cut off their ends and slice them thinly.
In a large pot, heat the butter and sauté the garlic and shallots for 3 minutes. Add the fresh mushrooms and cook for another 3 minutes. Add the dried mushrooms, and place a round of buttered paper (think it's called parchment paper) over the pan to cover it, and let it be on low heat for 10 minutes.
Uncover the pot, and add the flour to the mixture, blending well. You can add a small amount of butter if the mushrooms are dry. Add the veggie/chicken stock and the reserved cup of dried mushroom liquid and bring it to a boil. Then lower the heat, and cover the pot to simmer for 20 minutes. Season with salt and pepper.
Add the cream, chives, parsley just before serving.
