Aiyo I not so hardworking like you...so my bread has a hole at the bottom...cos after all it still goes down well into my stomach so hole or no hole.....does not matter to me. But I can understand where you are coming from cos I am also vain but no time to do extra step.

Yes there is something about bread making. It has to follow very strict rituals but if you do, you get beautiful bread. One of the reasons why many people fail is because they think it is like making cake, can be relaxed about some steps.....bread-making...follow instructions clearly, then you would be fine and get beautiful bread like what 25hrmaid has posted here.
actually hor, now that u mentioned it.... was trying to recollect what i did, or did not do 10 yrs back.
Got the breadmaking machine as wanted to make gluten-free and yeast free breads. And I think I now know why the breads were not as soft as I hoped. Because I wanted it gluten/yeast free, I tweaked and substituted some of the ingredients. (Maid, Ksi... not because I \"kay-kiang\" but I think u know why lah).
With the banana bread, because I stuck to the recipe formula, the bread turned out fine. So, moral of the story, follow the recipe closely

Regular flour, heck, I went to get bread flour one time just to make sure, but noo...
