      I used the following


      5 1/2 tbsp sweet potato flour
      150ml water
      1/2 tbsp chinese rice wine
      light soya sauce, salt, pepper to taste

      Mix the above in a bowl

      2-3 pieces of garlic, minced
      2 eggs lightly beaten
      parsley
      1 pack frozen oysters from NTUC

      Heat up enough oil to cover the bottom of you frying pan.
      Fry the garlic till fragrant, turn up heat and pour in the flour mixture.
      Fry till the sides of the flour appears crispy and pour in the eggs
      Once the eggs set, break up the flour into pieces and fry to desired crispiness.
      Add oysters, for a quick stir fry
      Dish out, garnish with parsley

      My family tend to prefer the flour more crispy then soggy so I fry it a little longer. But when I thought the flour looked crispy enough, I added the oysters, the liquid from the oysters made the flour a bit soggy. Think next time, I will dish out the flour and fry the oysters separately before adding them to the dish. And yah, this dish needs a fair bit of oil to get it right.

        Found a very stale chilli crab dish lying hidden somewhere in my computer, so sharing it here for em .... e-lunch? :? Will share a fresh one when I have time, meanwhile, enjoy the stale dish first! :oops:

          I have a tube of dettol antiseptic cream handy for any cuts and scrapes. Think that will do.

          My staff while preparing a crab dish for us, got pinched by a crab, tore thru her skin.             Hey Funz, does the flour have to be thin in the wok? The very famous oyster omelette in Melaka adds belacan to the garlic, and it tastes really good… I’m so going to try this soon!!


            25hourmaid, I told myself after reading your posts, that I die die must get gloves before i cook crabs at home again… u are tempting me with this pic!! so yummy!!

            Cham… with all these eating… not going to be able to shed the excess weight from CNY liao…

              Had cravings for oyster omelette and so happened found this frozen oysters at NTUC for only like $3.95 (i think). Was actually thinking of visiting the hawkers food trail but dread the crowd and the queues so tried making the omelette at home.

                  WOW, yummy crabs!!! Wah today no need to take lunch already... got so much E-Lunch for us to feast. :drool: :drool:

                    I used a frying pan instead of my regular wok. And yes, preferable for the flour to be thin. Yah I like the ones with sambal but did not add cos the kids wanted to eat.

                    But did not manage to get the right dipping chilli. Used the chilli chuka that I had but somehow not the same.

                      Am a weekend cook only.

                      Read the papers this weekend about kids cooking and there was one kid who said cooking relaxes him. Well I feel the same.

                      Whipping up some dishes relieves my stress. So the more stress, the more stuff I whip up. 😉
