Thanks Funz and Augmum for your replies. I baked in a 3-in-1 oven (microwave, grill and convection) at 180 deg celsius for 40 mins. My first attempt last week was bad. My son commented that the texture was more like bread than cake, and the top was tough like cookie! :?
Tried again this afternoon, beat the mixture for a shorter time. The texture feels more like cake this time, but the cake still raised quite high. Taste-wise, it was ok for both attempts.

prob u an try lower yr oven temp
i use 180 deg only for first 10 mins, after which i lower to 170 deg or even 160. deg. -

I'm also using a convection oven for my baking. I will normally lower the temp by about 10 deg. And sometimes lower it even further in the last 10 mins depending on how the cake is faring.

counter11, another way is to use aluminium foil to cover the top, (leave a gap so that the hot air still can enter).
if u see too fast browning on the top of the cake, esp towards the end stage of baking. -

1) i put the butter into the microwave, under thaw function for a while,
yes, some already melted.
2) 180 degree for abt 10 min , after which i lowered to 170 and even 160 when browning of the top is too quick. total abt 40 min.
oh yes, u mentioned that u're trying out my recipe today, rite ??

ok, that's good.
quick go and bake lah......i wanna to know whether yr hubby likes the fruit cake.
i have no more cakes left, but stil haven't think of what to bake next.

Augmum, maybe bake chocolate chip cake, or marble cake? I've always loved marble cakes... just so delicious! but don't know how to bake it to get the swirl... must try one day. :love:
