      Tks :love: , actually the kimchi taste better after a wk's fermentation in the fridge. šŸ˜‰ but when it's fresh, the cabbage stalks r crunchy.

                    of course! i modified slightly from the various youtube sites (aeriskitchen & maangchi)

                    ingredients :

                    2 cabbages (abt 2.5kg)
                    1 med carrot
                    1/2 med radish (round n stout one best, but skinny also can)
                    1 head garlic
                    1 med onion (red one sweeter)
                    8-10 scallions
                    1 thumb size ginger
                    1 fuji apple
                    1 cup hot pepperflakes (must be korean)
                    60ml fish sauce
                    sesame seeds (up to u)
                    sweet rice glue (3tbsp glutinous flour+3tbsp water, dissolved + 2 cup water, bring to almost boil ->bubbling, + 2 tbsp sugar. stir constantly till translucent, let cool)


                    how i do it :

                    1)http://i51.tinypic.com/2h3r1tx.jpg\"> :cut cabbage to bit-size, wash, soak with salt-mixture (10cup water+1cup salt). for 1 1/2 hr, turning every 1/2 hr so that the cabbage are evenly coated with salt.

                    2)while the cabbage are soaking, make rice glue n let cool.
                    3)julienne carrot, radish, scallion.
                    4)chop apple, onion, ginger n garlic; into blender with fish sauce.
                    5)pour 4) into cooled rice glue.
                    6)+hot pepperflakes.

                    7)add 3) into mixture.
                    8)mix.

                    9)drain n wash cabbage 3x.
                    10)mix cabbage in batches with 8). add sesame seeds.

                    Voila! u have kimchi. Note : when packing kimchi into container, must press slightly so that its compact for fermentation. eat it 7-10 days later, it taste best after slight fermentation. šŸ˜‰

                      But alamak, gotta wait 7-10 days? When I want to eat, I want to eat lah, cannot wait 7-10 days. And when dun feel like eating, will not feel like making. šŸ˜‰ My cooking is driven solely by my moods and cravings.

                        :hi5: sama sama here ... But kimchi can keep in fridge for months! Only the longer u keep them, the more sour it becomes. Aged kimchi good for soups n as seasoning ingredient for other dishes such as fried rice, pancakes or Stir fry with seafood. Fresh kimchi is v crunchy, if u want to eat immediately, u can take some out n further season w a little salt n eat w rice. :love:
