      Well you need the cake to cool sufficiently to remove from the baking tin. But the fudge is best applied when it(fudge) is still warm. Doesn't matter whether the cake is cool or warm. Thereafter, you need to chill it.


      When you wanna eat it, let it rest at rm temp for awhile, else the cake is a bit dense/hard, like the sara lee pound cake straight out of the freezer.
      Have u encounter cake collapse once cool? I'd tried 1 recipe but after steamed, it collapse. :sad:

        Yup, I posted a rather flat looking orange sponge previously though it was baked not steamed. Though it still tastes great but looks wise not that appealing.

        I can only guess at a few possible reasons.

        1. opening the oven/steamer in the middle of the cooking process
        2. recipe called for too much liquid.
        4. inadequate beating of eggs but in this case, the cake will not even rise properly when baking.
        3. Sudden temperature change. I will normally let the cake cool in the oven or steamer instead of removing it immediately once done.
        5. undercooked cakes. The cake will sink in the middle if it is undercooked.

        Most cakes will deflate a little when cooled and sometimes using a baking tin that is too big may cause the cake to look flat as the batter is spread too thin to give the cake a nice height.

              No probs LKVM. Good recipe must share. I cannot claim full credit oso since I pulled the recipe from elsewhere also. Hehe.


              Am considering tweaking the recipe a little to make a pandan fudge cake. Must find the time.

                    @LKVM, have not baked any blueberry cakes but have made blueberry muffins before.


                    @blurbee, this one is baked. So your steamed banana cake rose well?

                    I have 2 punnets of raspberries in my fridge now, given to me by my sis. Wonder what I should do with them. Raspberry sorbet, maybe.
