Have tried making pandan chiffon cake.every time, it managed to rise too much and crack. After I cool it down, it sinks, and when I flipped it over, the top part now becomes bottom and will be heavy, whereas the bottom now becomes top will be very soft and spongy (which is what I want lah). But why is it that the other side is not soft and spongy leh? :?

How to prevent chiffon cake from risen so much until it crack and then cool down, sink to the original level??

Ehhh... my chiffon cake tend to crack oso, I actually like the cracks 😉 Check the heat of your oven. And for a more evenly risen cake, after beating the eggs to the desired consistency, turn your mixer to low and continue to beat for another minute or 2. That helps to stabilise the air bubbles. The other thing that I do is the lightly 'bang' the cake tin on the table after pouring in the batter to get rid of excess air bubbles.

I've been trying out a couple of recipes for cookery lessons at my centre. There are a few things that I am looking for. Easy recipe, standard measurements and time (should not take more then 20mins prep time, baking time max 20mins). After trawling the web for some recipes, 2 caught my attention.

            Maple syrup butter cookies.

This is easy enough for the kids to handle and they are yummy.

5 minute Chocolate cake in a Mug

This one, hmm, sounds super easy and really, it takes about 5 minutes from start till end. But the end result, not something I will eat. Maybe I should tweak the recipe a bit and try again. But really easy and fun for the kids.

hi all, can i ask. can i put all the ingredients of making cake into bread making machine and choose "cake" options… will it beat the powder egg and othe rmixture together and bake one cake? any idea if this will work ?as if we bake cake, we need to beat the egg with butter then slowly add in flour and all…

                LKVM:

After I bought the oven I never did the cake in the breadmachine but I used do it before...
I used to beat the egg slightly then add into the steps written in the recipe book...
as in dump the rest in and start the \"cake\"option ?it works right?

Believe me when I say that 1st try of the cake in a mug is not something I will eat.

Just tried again with a change in the recipe and this is what I got.

This one, is edible. Not fantastic but still edible. So this recipe might be a possible addition to my curriculum afterall.

LKVM, I tried it today at my centre with my staff. My staff tasted the cake fresh out of the microwave and all of them liked it. Hmmmm... not a very discerning bunch when it comes to food.

Try it with your kids. This is my altered recipe. You need to use the biggest coffee mug you can find at home or else it might overflow.

                      4 tbsp self raising flour
                      4 tbsp sugar
                      2 tbsp cocoa powder
                      1 egg
                      3 tbsp fresh milk
                      3 tbsp melted butter
                      1/2 tsp vanilla essence

Put all the dry ingredients into the mug and stir till well mixed.
Add egg and stir well until you get a thick paste. Remember to reach all the way to the bottom of the mug
Add milk and butter and stir well
                      Lastly, add the vanilla essence

Put it into your microwave oven. Microwave it on high for 3 mins and you get your cake.

Easy as that. You can add choc chip or chopped nuts if you want. Best to be eaten fresh out of the oven with a scoop of ice-cream, as it tends to get dry after some time.

Try it and see if you like it.

Instant dessert. Might just give it a go. 🙂
