      LKVM, I tried it today at my centre with my staff. My staff tasted the cake fresh out of the microwave and all of them liked it. Hmmmm... not a very discerning bunch when it comes to food. :razz:


      Try it with your kids. This is my altered recipe. You need to use the biggest coffee mug you can find at home or else it might overflow.

      4 tbsp self raising flour
      4 tbsp sugar
      2 tbsp cocoa powder
      1 egg
      3 tbsp fresh milk
      3 tbsp melted butter
      1/2 tsp vanilla essence

      Put all the dry ingredients into the mug and stir till well mixed.
      Add egg and stir well until you get a thick paste. Remember to reach all the way to the bottom of the mug
      Add milk and butter and stir well
      Lastly, add the vanilla essence

      Put it into your microwave oven. Microwave it on high for 3 mins and you get your cake.

      Easy as that. You can add choc chip or chopped nuts if you want. Best to be eaten fresh out of the oven with a scoop of ice-cream, as it tends to get dry after some time.

      Try it and see if you like it.

        This one is for fun. If you want to impress your hubby, use this one.

        Steamed Chocolate Cake
        180 g butter
        200 g caster sugar (reduced to 180g)
        200 g full cream evaporated milk
        2 eggs, slightly beaten with fork
        100 g plain flour
        50 g cocoa powder
        1/2 tsp baking powder
        1/2 tsp baking soda
        1/2 tsp vanilla extract or 1 tsp vanilla essense
        2 tbsp of rum (optional)
        Method
        1. Combine sugar, evaporated milk, vanilla essence and butter in a saucepan. Stir over low heat until sugar is dissolved and butter has melted. Remove from heat.
        2. Add the beaten eggs into the slightly cooled mixture and stir till well mixed.
        3. Sift the flour, cocoa powder, baking powder and baking soda into a large mixing bowl. Add the eggs mixture over the flour and stir till smooth. (Batter should be runny).
        4. Heat up the steamer. Line and grease a 7\" baking pan. Pour the batter into prepared pan and place into the steamer. Cover the top of the pan loosely with a piece of aluminum foil.
        5. Steam over medium heat for 45 minutes. Check for doneness by inserting a skewer into the cake. If it comes out clean, it’s done. If not, steam for a further 5 minutes.

        LKVM used this recipe but she baked instead of steamed it.

          The tsps and tbsps all refer to measuring spoons. Not our normal spoons. If the recipe calls for cups, then it is measuring cups, not our normal drinking cups.

            ai yo yo! i think i still got long way to go. Don mind give me the full name for tsps and tbsps? anyway i’ve sign up a baking course (1 lesson only) but i am so excited now and seem like cannot wait till October.

              Baking basic cakes is actually relatively easy. It is just a matter of measuring out the ingredients and mixing them together and sticking it into the oven.

              If you cannot wait to get started, try baking some muffins first. Try this basic muffin recipe. You can add raisins, choc chips, etc.

              2 cups all-purpose flour
              3 teaspoons baking powder
              1/2 teaspoon salt
              3/4 cup white sugar
              1 egg
              1 cup milk
              1 teaspoon vanilla essence
              1/4 cup vegetable oil (for a richer taste, use melted butter)

              1.\tPreheat oven to 200 degrees C.
              2.\tStir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups.
              3.\tVariations: Blueberry Muffins: Add 1 cup fresh blueberries.
              Raisin Muffins: Add 1 cup finely chopped raisins.
              Cheese Muffins: Fold in 1 cup grated sharp yellow cheese. 4.\tBake for 25 minutes, or until golden.

              Get those muffin paper cups and you don't have to get any muffin baking tin.

              For a start, just follow the recipes available. Later on, don't be afraid to try and experiment with the proportions and the ingredients until you get the combination that is to your liking.

                Oh! i thought baking a cake, cupcake, muffin are all the same, the different is using diff containers b4 putting into the oven? :oops:

                  Hahaha. There are some differences in the method and proportion of ingredients.


                  Muffin is by far the simplest and most forgiving cos you just dump and stir all ingredients. Cupcakes will usually require you to cream the butter and sugar. Most cakes will require you to whisk the eggs to a certain consistency.

                  As you try out more recipes, you will notice the different methods.

                    wanna ask experts here… is the frosting for cupcake can be use on cake? the recipe i have is to use unsalted butter, cream it with icing sugar… then add vanilla essence… then beat some more till the texture is right… any idea if this will work on normal cake(round/square)…
