      I was left with a fair bit of cinnamon sugar after making my cinnamon pull apart loaf so rather then let all the aromatic sugar languish on my counter top, I thought I'd try this.

                Funz, in your muffins recipe, you mentioned "grated cheese". What type of cheese is recommended for cakes?

                  You referring to muffins right? For muffins, I use cheddar cheese.

                    Ok, so I tried my hand at baking a moist coconut cake. It became a hot favourite and the family 'whacked' it. Even gave some away to a friend who tried it and requested more.


                    Am now spurred to start baking cakes, which I have always avoided and instead relied on pre-mixes.

                    This is a simple bake. Will take baby steps. Still have so much to learn šŸ˜„

                      The mixing bowl can be any material.... it could be plastic or anything else... no issues.
