Ok, so I tried my hand at baking a moist coconut cake. It became a hot favourite and the family 'whacked' it. Even gave some away to a friend who tried it and requested more.

Autumnbronze dear.... I'm also your friend, right? :please: :please: :please:

gimme.... gimmeee.... gimmeee... :please: :please: :please:

Errrmmm another friend here raising hand shamelessly oso hor..
The usage of the word \"whacked\" sure spelt success to me, autumnbronzee hun. :celebrate:

Btw... i'm also gonna be actively be catching up on reading this thread once i get my battle baking gear in place. But hor.. how to scour the entire thread for recipes? 😢 Perhaps someone can put all the shared recipes on Pg 1?

              :please: Pretty pleazzze? :please:

Coconut cake? Looks nice! Mind sharing the recipe please? TIA. 😄
                    Hi ppnqq,

                    Thanks!!

Sure .... here is the recipe:

                    4 eggs
                    125g butter, softened
                    Half cup plain flour
                    Half cup milk
1 cup castor sugar (I used slightly less, cuz the coconut itself is naturally sweet and it turned out just nice)
                    1 cup coconut
                    400 ml can/pkt coconut milk

                    1. Blend or process all ingredients until smooth

                    2. Pour into greased 23cm pie plate and bake in moderate oven (180degC)
                    for 1 hour

                    3. Cool to room temperature and turn onto serving plate

                    4. If desired, decorate with whipped cream, glace cherries and toasted shredded coconut

This recipe book is almost 20 years old, but it's the first time I tried the recipe out 😄

                    Happy baking 😄
