for your boy’s ans, he must put comma as follows:
all of them, except Ellen, do not like to play chess.
in eng, verb must follow noun. so "do" must be after "them"
I think correct ans must be:
all of them do not like to play chess except Ellen. -

If the sentence structure is like that, you can only use \"except\", not \"instead\", or else it will be wrong.schellen:

Except for Allen, the rest do not like to play chess.
But then I understand that the 'except' is not placed in the beginning of the sentence. -

For Ellen: You can use except but it shouldn't be at the beginning of the sentence. Instead is not appropriate here.
For Billy: I still think it's refusal.
