Hi L-earner,
i use the window panel method, can stretch, but just qondering would it over knead? coz I read in some article that dough does get over-kneaded?? they then produce tough breaad. not sure if its true. :? -

smurf, yes i also came across books that stated over-kneaded dough will produce tough bread, but your 35min machine knead shd be ok, otherwise reduce to 1 cycle knead then hand knead another 5-10 mins shd do the job. let us know if this works ...Hi L-earner,

Smurf, i think different machine varies, if u r using a mixer, then u can time for abt 20-25mins using the \"hook\" attachement; but if u r using the breadmachine, then the dough setting or kneading function, just once, follow-by hand knead to make-up the 25-30min knead time (most books state to knead abt 20-30min); but i think u can safely stop once u reach the window-pane status.
Btw, r u using the z-machine?? Many z-machine users here ... -
nope, not using z-machine, coz I dun need it at the moment. wondering why need a machine ha? can just use hand to knead mah, or use mixer. I find that its easier coz I never know how to operate a machine. hee...
i trying to make sourdough bread, but failed. sigh...the dough came out just a lumpy hard thick crust with NO stuff at all! :stompfeet: -

It is true that you don't need a machine to make bread but Z machine is there to make thing easy. You just throw in all the ingredients and you'll get hot bread ready for you. It is for busy people who does not want to spend time kneading and waiting and checking on the window pane results and yet get home made bread. I am reluctant to throw out my BBCC-S15A (obsolete model)even though the body unit is badly dented after my move. My other B brand machine which has the similiar shape as the BB-CEC 20 can't produce the same results where texture is concern (due to kneading time programmed). Sourdough bread is not easy to make. Bread characteristic usually has large holes and the crust is thick and hard, bread texture is chewy. Infact, the larger the hole, the better the bread.

come to think of it, maybe my sourdough is quite successful? coz it had thick and hard crust, and chewy inside (not much stuff inside, but still chewy). turned out that the bread tasted very sour…
or it has something to do with the starter? i use yogurt as starter so that may explain why? been feeding the starter since beginning of nov…
i not keen in bread machine, coz when u take out the bread, you have to take out the spinner (dunno what u called it) and that doesnt make the bread nice.
can I just ask, texture wise, is it the same as kneading by yourself?? -

Sorry Smurf, I'm not a sourdough bread maker as the thought of feeding the starter puts me off. It is also very sensitive and precise..like some 12 hrs thingy. As for the machine bread, the ugly part is at the bottom. What I'll do is cut a thick slice at the bottom then cut into triangle shape, keep in freezer and do thick french toast as n when I like it.
