Ikkousha is from Hakata right? I went to Hakata before and tried ramen there (not from Ikkousha). But I still think Kumamoto-style ramen tastes better than Hakata-style.
From the website pictures, I agree Bario looks better than all the ramen

Yea. I agree. Japanese chefs ought to be better cookers of ramen compared to Singaporeans.
We Singaporeans should just stick to our Char Kway Teow and Hokkien Mee

Here for a limited period only? What's pity! I'm going to get some ramen there before it closes downThere's a section in Iluma which has a collection of ramen stalls straight from Japan. The whole section sells nothing but ramen. My understanding is that the stalls are here only for a limited period. There's a competition going on where the stall with the most votes gets to open a restaurant here.
Worth a go if you like ramen. -

oh, that's not what I meant.
It is more on the training and experiences. I would presume the Jap chef that they sent here must be of certain years of experience and standard, can't risk spoiling their brand name right?
on the other hand, how much training & experience would the local chef have? not that it will be no good but may take a while to reach the same standard. And provide there is no turn over too. -
I think some of the Japanese chefs/servers probably went over to Changi to run that one now that the Iluma one is established.

Got the whole family to go Iluma after reading this thread.
Ikkousha - first to be served, so priority went to DD and DS, followed by my parents. So by the time I got a share of it, there's only a few strands of noodle and a bit of soup left. :sad:
Thin noodle, tasty but not-too-salty soup. The soup is a bit thicker than the others. All in the party agreed this to be the best. I couldn't tell because I didn't have much of it.
Bario - Broad, flat noodles, served with heaps of bean sprouts. Broth is tasty as well, but also more salty. The thick, flat noodles made it tougher and more chewy, so most didn't like it except DW and I who likes the more chewy texture.
Tetsu - Tried the special Paitan Ramen, which is a broth made from pork, chicken
and seafood. Didn't leave much of an impression. Tasty but salty (more so than Bario) broth. Noodles is no different from other ramen place. Maybe their Paitan (pork and chicken broth) will be better...
Tai-sho-ken - first, the good. Bouncy, \"Q\" noodles...I like the texture of this noodle most. The bad - saltiest of the lot! Not only the broth, but the char shu was also salty! Even my father, who likes his food heavily flavoured, found this too salty. We absolutely forbid DS and DD to drink any of the broth.
So if I ever do go there again, I will head straight for Ikkousha to have a taste of what I missed. :drool: -
Went to Changi Airport T3 again today for ramen.
Ordered from Ikkousha- Hakata tonkotsu (θ±ιͺ¨) ramen, i.e. pork bone broth ramen and had cha siu as side order.
It was heavenly!
The broth was so delicious and milky.
The char siu done so perfectly.
Only thing did not really like the texture of the ramen - too thin.
The atmosphere was actually marred by the staff at the Gantetsu stall.
He kept shouting out his stallβs food in Mandarin so many times just like a Garang guni man. He said something to this extent : come and taste Sapporro ramen, donβt just stand there and see.
I hope the management can instruct him not to advertise in such a distasteful manner. -
Iluma under major renovation now. Are they still open?
