      all foolproof cher... my niece nv cook before and after i whatsapp her step by step like what i wrote here, she manage to whip up 3 dish 1 soup meal for her bf and future in law... haha...

            carrot and potato soup


            ingredients needed :
            1 medium size carrot
            4-6 medium size potatoes
            handful of ikan billis
            black pepper seeds (5 seeds will do if cannot take too spicy)
            vksm note : dun buy russia potatoes which are used for western food, use the yellow flesh potatoes, same as those used to cook curry.
            vksm note : baby carrots are not suitable to boil soup as they become soft very easily.
            vksm note : u can change the ratio of carrots and potatoes according to your preference.

            step 1 : wash and cut the carrot into cubes of roughly 1cm to 1.5cm. cut them smaller if u are not planning to slow cook them.
            vksm note : i usually dun skin the carrots unless the skin is really old and discoloured. i use a fruit knife to scrap the skin a little to remove some roots or blemishes that i see. it is always better to eat with skin.

            step 2 : skin and cut the potatoes to similar sizes as the carrots, preferably slightly bigger.
            vksm note : potatoes will be cooked faster than the carrots, so take note not to cut the potatoes smaller than the carrots, if not u will have soft potatoes but hard carrots.. worse still, soft carrots but no more potatoes as they all got too soft and got \"dissolved\" in the soup.

            step 3 : put water in soup pot to boil, put the ikan billis in to prepare stock. boil for about 20mins and remove ikan billis.
            vksm note : whether to remove the ikan billis from soup, is optional. i personally find the soup tasting a little bitter when ikan billis is left in the soup for too long.

            step 4 : put the carrots into the pot and let it boil for 5 mins, after that put in the potatoes and boil for 5 mins.
            vksm note : putting the carrots first ensures that the carrots are cooked for a longer time than the potatoes.

            step 5 : pour the soup and ingredients into the slow cooker and turn on low. put in the black pepper seeds, let it slow cook for anytime between 4 to 6hrs.
            vksm note : the black pepper seeds should be smashed with the handle of your knife so that the \"spiciness\" of the seeds can be let out into the soup.
            vksm note : if u are not putting the soup into slow cooker, u can continue to boil it for around 30 mins and it will be ready to serve. u can know by using the soup ladle to cut the carrots to see if it is soft.
            putting in to slow cook is for working mums so that they could leave the soup safe at home while at work.


            step 6 : season the soup and it is ready to serve.

                    I’m interested in the types of herbs u put for your herbal and ginseng soup. Do u buy those ready packs or separately? Any advice on a good place to buy them without being chop as a radish.

                      Dear vksm, thanks for the carrot and potato soup recipe. I wonder why you dun use pork pieces in this soup. Maybe ikan bilis is enough to sweeten the soup yeah? Btw, where to get Russia potatoes? Or is it russet potatoes? :scratchhead:
