      I used Pampas Butter puff pastry. Comes in a pack of 3 sheets. Bought it from NTUC. Have never been truly successful in making puff pastry, you need cold hands for that, mine are too warm. Cooked the custard and apples myself. No whip cream for the custard, I used low fat fresh milk.


      For this batch that I made I used the following estimates

      Apple filling
      3 Fuji apples cut into small cubes
      2 tbsp sugar
      50g butter
      juice of 1/2 a lemon (add the zest in if you like)
      dash of cinnamon powder (add more if you like a stronger cinnamon fragrance)

      Dump everything into a pot and cook till the apple is soft. If there's too much liquid, thicken with a little corn flour solution.

      Custard
      1 egg
      1 cup low fat fresh milk
      1/4 cup castor sugar
      2 tbsp plain flour
      1 tsp vanilla essence
      25g butter

      Whisk the egg, sugar, flour, vanilla and about 1/3 cup of milk. Heat the balance of the milk and add that to the egg mixture while stirring. Put the whole mixture into a pot and cook over low fire. Be sure to keep stirring or it will burn or curdle in lumps. Once the custard thickens, turn off the heat stir in the butter and let it cool.

      Follow the baking instructions on the packing of the puff pastry. Once the puff pastry is done, all you need to do is assemble and dig in.

      Do adjust the amount of sugar according to your taste.
      Thanks Funz, for the recipe. Whenever I cook my apples either for bread pudding or apple pie, it just didn't turn out right. I didn't get that translucent look in the apple nor the sticky jam. Perhaps it's the flour that makes the trick?

          Funz, that is a great recipe, it was really yummy. I replaced the apple with peach and kiwi. thanks for sharing !!!

                      Sorry, I'm no guru but doing this oil and water pastry can be quite tricky. You need to wrap securely the oil into water pastry and roll out carefully. The oil pastry should not be exposed or the water pastry broken. 1)The rolled out pastry should be elongated and with one palm movement, roll up the flatten pastry. 2)Place the coiled looking pastry facing up, flatten with palm and roll out gently and evenly, fill the fillings and sealed the opening. That way, you can see the spiral clearly. The thinner the pastry for action (1), the more spiral you'll get.
