            Just done with lunch at jack s place with hb. This hot weather is really unbearable


            I also like to get the A1 bee hoon. Good for serving individual portions.

            My prawn noodles very easy one. Haha. Pai sei. Normally I accumulate prawn shells. Till about half kg, or think I should de clutter my freezer, i ll do my prawn noodles.
            First, fry the prawn shells till fragrant,
            Add boiling water, add about 3 cloves of garlic, bring to boil, then simmer.
            Add pork ribs, simmer for about an hr, season with salt, fish sauce and rock sugar.
            Sometimes if I think it s not tasty enough, I ll add a packet of hai s ready made prawn paste.
            Add fresh prawns to the soup, boil for a while, cool the prawns, remove the shells and throw shells back into the stock. Set aside the prawns.
            Blanch the other ingredients, like kang kong, bean sprouts, sliced fish cake and noodles. Add soup and serve.


            Simple fried Hokkien mee:
            Sometimes I make the hokkien prawn mee, using the prawn shell stock, and add some squids in.

            Fry minced garlic, scramble an egg in, add prawn stock, mee and thick beehoon, bean sprouts. Simmer, add fish sauce, cooked prawns, squids. Done!
            Drizzle with lime juice, eat it with sambal balachan :drool:

                About the prawn shells,

                1. do you wash them before freezing?
                2. do you add oil to fry the shells?

                Normally the prawn head has roe and its yucky stuff, do you keep the roe as well?

                I think this prawn shell stock can also be used for cooking popiah fillings.

                  Desserts, any particular brand for the fish sauce? Wah, i can imagine how fragrant my prawn noodles will be with the prawn stock. :drool: Now that you mentioned it, i recall it was how my aunt fried her bee hoon. She told me she used shrimp/prawn stock as well. Aaaahhh... it feels great to have a secret ingredient. :please:

                    Gee pacetone, I don't have a photo of it, sorry. I googled hai s products and tried to upload the pix, but couldn't. I bought mine from giant, the chiller section, It s found together with the coconut milk, tau kwa, curry paste etc. I tried the laksa paste dry version, also v nice 😄

                    Jen, I don't wash the prawn shells before I freeze, hehe, I know bit yucky. Just do a quick rinse before frying.
                    Ya, use a bit oil to fry the shells, yes, the roe is the one that gives the fragrance. I know, high chol.

                    Buds, I just any how Huntum the fish sauce 😉 . Though some friends tell me the Thai one is better.
