Sigh, I thought I read one of TheAnswer's post regarding egg dishes, wanting to post a reply.... but now I couldn't find it :slapshead:

      Anyway....to TheAnswer:

More egg dishes for your consideration--

      Long beans fried eggs
      Lup cheong fried eggs

      Tang hoon fried eggs
      Chye poh fried eggs
      Cabbage (white) fried eggs
      Onion fried eggs
      Bittergourd fried eggs

These are simple homecooked Teochew egg dishes, usually to go with porridge.

      Bon appetite.
      :thankyou:

Eggs are really nice but the problem now is I'm not done for the day and I'm starving. Still have another lesson at 6pm. Need to stretch after sitting down for 3 hours.

Please share recipe for the one highlighted in blue.

My version. I sauté large yellow onions, then some fish cake slices, red chilli followed by my wong bok and lastly add in the eggs + a few dashes of stock.. choice between veg/ikan bilis/chicken. If I want it slightly soupy, I add water.

The other day you put up a pic Mee Hoon with soup, was that the soupy version?

I used to make this meat dumpling with egg skin, then cooked in cabbage soup.

Basically, it is little egg omelette, put a little portion of marinated pork on one side of the egg omelette, fold the egg omelette to form a half circle. Repeat this process until all beaten egg and marinated pork are used up. This is the meat dumpling with egg skin.

There is a pot of boiling cabbage soup. Cook the meat dumpling in the boiling soup.

After I married, I only made this twice. Too much work in making the meat dumpling with egg skin.

Hubby and one kid like this. The other kid does not like it.
