      I didn’t make tomato sauce as base. I made "cream sauce" from scratch…then put tomato,button mushroom,finely chopped spinach(kid hate spinach,so hv to chop finely) & cod fish,then topped with mozzarela(did i spell correctly?) cheese,drizzle wf some olive oil b4 baking.

        during the baking process, the tomato n mushroom will melt,its sauce mixed with cream sauce then become tomato+mushroom sauce…

          Today's dinner likely to be Chinese style again.


          This morning I went to wet mkt and saw 花生根. So I bou it and went to buy pork tail bones.

          share share the peanut roots recipe.I used to drink this soup when i was small,my mum made a lot for me coz heard that good for growing tall..Obviously,didn't work for me...hehe 😆

          I am boiling the pork tail bones now with 2 slices of ginger (thinly sliced). Think will boil for another 30 minutes -> total 1 hour 30 minutes. Later will scoop out whatever is floating on the top so I get a clean looking soup. The soup will be milky white, not clear.

          The 花生根 is now soaking in water. After washing, will add to the soup and add in red dates and wolfberries. Then simmer for another hour.

          Today, hv to stay at home.

              I bou a few tomatoes this morning. Will do the base sauce later since I will be at home to look after the peanut soup 😂

                I'm not a good cook at all 😂 My palate is not so discerning. I alternate between LKK and Kwong Cheong Thye (whichever is on promo)

                Tomato based pasta sauce from scratch is not hard. Just difficult to get juicy tasty tomatoes. The amount of sauce depends on how good that batch is. I used to cook it so often when I was in uni cos it was cheap and easy.

                Quarter tomatoes (if you break up tomatoes by hand, the taste is better). Add some olive oil to pan. Add tomatoes. Stir fry till tomatoes soft. Use spatula to break it up to hasten the process. Remove tomato skin that separate from flesh during the cooking process. Add oregano, black pepper, water, salt to taste. Optional - other herbs, capsicums, mushrooms, onions, minced meat/seafood, chilli flakes/cheese etc. Some ppl used canned whole tomatoes skin removed - cuts down cooking time by half.
