I think the short grain from Taiwan will do as well.
Will post the recipe later. -
Any short grain and calrose rice will do, but the Botan rice will be better, the importance is the vinegar used to flavor the rice; and the type of water used, high mineral content water will alter the vinegar taste.
We use the vinegar powder in place of rice vinegar solution for convenience, there are a few brands of vinegar powder available at SG supermarkets (Isetan, Medi-ya, NTUC finesse, Cold storage.)
Add the vinegar powder and a little salt into the rice when the rice is cold, mix with hand, blend the mixture well… note that the vinegar powder will make the rice a bit wetter and less sticky.
You will need a bamboo-mat as roller, place the seaweed sheet on the bamboo mat, lay the vinegared rice, flatten the rice to the desired thickness, lay the rest of the fillings, roll it with the help of the bamboo mat roller…
Note. Any oily fillings will loosen the rice and made the rolling job harder. If you are stuffing in meat filling, make sure the meat is dry, free of runny oil. -
When I was learning to make sushi roll, I read many online articles and watched YouTube on how to roll the sushi. I compiled and used selected portion fr each source.
Tools sushi bamboo mat. You can buy this fr Daiso. Daiso also sell the plastic container to get sushi roll without rolling. If you are using the bamboo mat, can consider to use plastic to cover it. I don’t use bamboo mat. I free hand roll. The important thing to abt rolling the sushi is to keep the stuffing tight and roll it tight. Or else the filling might fall out when you slice the sushi roll. But not too much strength hor or else the seaweed might break. Don’t fill too much ingredient becos will be difficult to roll and you might not be able to make a roll. Heehee.
Seaweed - place the rough side of the seaweed face up. This is the side you put the rice
Rice - fr what I read, after washing need to let it air dry and then soak for 30 mins. But now I just wash and soak heehee
I use the vinegar use for sushi, I will add in sugar and salt. The portion is 3 tablespoon vinegar, 2 tablespoon sugar and 1 teaspoon salt. This is for 11/2 cup rice. My kids like tangy and sweet rice so I a bit more of vinegar and sugar. I will warm the vinegar to help dissolve the sugar and salt. There are also seasoned vinegar then you can skip this but it contains MSG so I don’t buy seasoned vinegar.
When the rice and vinegar mixture have cooled I will mix both.
Before you start rolling prepare a bowl of water.
When you have the seaweed top with some rice, wet your fingers before spreading the rice evenly on the seaweed. Leave a finger spacing at the top and bottom of the seaweed. The max limit for the filling is about half of the seaweed length.
Filling - up to your fancy. My fav is egg, jap cucumber, avocado for younger kids and older kid and me get additional smoke salmon. From the top of tjr seaweed, the side closest to you, I will line cucumber first follow by egg, avocado and salmon and then repeat but without cucumber. The ingredients will need to be sliced length-wise. For avocado, I use a spoon to scoop a thin slice. The filling is placed on the rice covered seaweed.
Then I free hand roll making sure gently tightly roll all ingredients together.
Now the cutting of the sushi, wet the knife blade fr the bowl of water. I get rid of excess water then cut. After each cut wet the knife blade and get rid of excess water. From the YouTube there’s a way to let the water flow off but I just "scrape" the blade against the edge of the bowl LOL.
I fried the egg used for sushi making.
I think that’s about it. -
Thank you SAHM_TAN and HArlequin. May I know any specific brand of vinegar to buy?

Thanks SAHM_TAN, for all the details. I initially thought sushi should be quite easy to make but from your sharing seems like there are quite a few know-hows that one needs to be equipped with.. same with claypot rice, which I am also currently keen to try out.buds,

Buds, thanks for your chicken salad pita recipe. Tried that for lunch today, well received by everyone. :thankyou:
You're most welcome, wonderm.
Glad your family liked it. Was I right about the under 30min?
This base recipe is great for a variety of quick fixes involving breads of all types. Cheap and easy to get ingredients, simple to do and yet quite filling for any meal of the day actually, plus not much cleaning up to do after meal time.
Goes great with cream soups as well. -

I dumped all ingredient in the rice cooker, last 13 mins I add in the marinated chicken breast meat, cut up.
For the sushi, it's quite easy lah.
With your deft hands sure can roll roll
If you want short cut and don't mind the msg can use the seasoned vinegar. Then can mix in with the rice once it's cool.
The mixed rice will be sticky so need to wet hands and knife blade when handling the rice
I'm a klutz. So if I can sushi, so can you
