        SAHM_TAN:
        buds,

The jap rice brand is Hitomebore. But I think any short grain rice will do bah.
Thanks SAHM_TAN, for all the details. I initially thought sushi should be quite easy to make but from your sharing seems like there are quite a few know-hows that one needs to be equipped with.. same with claypot rice, which I am also currently keen to try out.

Will letcha know when I try it out! :callme:

        Thank you! :please:

@ Harlequin : Thank you for chipping in your crucial tips! :please:

Buds, thanks for your chicken salad pita recipe. Tried that for lunch today, well received by everyone. :thankyou:

          You're most welcome, wonderm. šŸ˜‰

Glad your family liked it. Was I right about the under 30min?

This base recipe is great for a variety of quick fixes involving breads of all types. Cheap and easy to get ingredients, simple to do and yet quite filling for any meal of the day actually, plus not much cleaning up to do after meal time.

Goes great with cream soups as well.

            My claypot rice supper easy.

I dumped all ingredient in the rice cooker, last 13 mins I add in the marinated chicken breast meat, cut up.

For the sushi, it's quite easy lah.

With your deft hands sure can roll roll šŸ˜„

If you want short cut and don't mind the msg can use the seasoned vinegar. Then can mix in with the rice once it's cool.

The mixed rice will be sticky so need to wet hands and knife blade when handling the rice

I'm a klutz. So if I can sushi, so can you šŸ˜‚

I buy those used for sushi, can be found on the shelves for jap foodstuff. I look for those in glass bottles.

Don't feel like eating rice? Sick of plain ol' bread too, huh?

With just simple ingredients you can whip up this filling quick meal in under 30 minutes.

                  The ingredients :

                  http://i41.tinypic.com/35ko108.jpg\">

                  Pita Bread

                  http://i44.tinypic.com/14u8g1l.jpg\">

                  Lingham's Chilli Sauce
                  Lady's Choice Salad Sauce
                  Fresh crispy lettuce

                  http://i42.tinypic.com/23sac12.jpg\">

The bird was purchased from Cold Storage already grilled. We personally love the supermarket's black pepper grilled chicken. Nicely marinated and grilled to perfection.

The bonus was, the birdies were on offer that day. Woohoo! Only SGD $4.99!

                  Other ingredients:

                  Big Yellow Onions & Capsicum

                  Optional Ingredients :

                  Black pepper (grind)
                  Tomato
                  Cucumber

Saute a few slices of the big yellow onions until they are fragrant. Add in the diced black pepper chicken together with the chilli sauce and salad sauce. About 2-3 tablespoons each (for a small bird). After a good quick stir fry, add in the sliced capsicums.

If you like to add in extras like diced tomatoes, cucumber and what nots... go on.. just throw them all in! We like our capsicum crispy so turn off the fire after a few stirs round the pan.

                  http://i41.tinypic.com/24eq9v8.jpg\">

Rinse some lettuce and slot a nice crispy leaf as base inside a pita that has already been cut in half.

                  http://i44.tinypic.com/imtdvr.jpg\">

Use a small spoon to delicately fill up the pita with the stir fried ingredients. Drizzle more of the sweet Lingham Chilli Sauce if you like. šŸ™‚ A small bird can fill about 9 to 10 pitas like the one pictured above!

Here's a close-up of the quickie meal of Chicken Salad Pita.

This same preps went great with my pizzas...

Taken before it was popped into the oven...

                  http://i43.tinypic.com/2v2g3.jpg\">

This one taken after the DING of the oven!

                  http://i49.tinypic.com/2n9jrx1.jpg\">

......and also the Open-faced Mediterranean Focaccia Sandwiches. You can put as much filling or topping depending on which staple you use for it. We use the Prego Traditional Herb Sauce as our base.

By the way, those open-faced sandwiches.... ours were this thick. Yup, size does matter. šŸ˜‚

                  http://i42.tinypic.com/2uglxes.jpg\">

Plus they were topped with ultra happiness boosters called mozarella cheese. All grated with love.

Thanks for your compliments. It's always about presentation, right? Kids and husbands or rather, men, in general... are visual creatures.

Entice them to like what they see and they will eat it. šŸ˜‰

Pita is definitely a great lunch box option. For me, i bag them in ziploc bags or those disposable transparent da bao plastic bags with/without the red/orange strings. They can choose to heat it up right away in the microwave (mornings are always a mad rush for the school bus ) or they can bag it to school, as-is.

Yes any juice will soften the pita. So if you intend to have this packed off for junior or hubs use less of the fruit salad sauce/cream... and stir fry the mix till it is dry instead of moistly juicy. Juice content also varies between the veggies you select to stir fry them in. Tomatoes will surely add to the juice content even if you use less fruit salad sauce. But if you or the loved ones you are packing for like tomatoes, you can consider setting aside some slices in a separate compartment in your lunchbox. Dry the lettuce with a paper towel after rinsing as extra measure. If you are still wary about the pita wetting itself before break time, then you may consider bento-ing it. Yup, separate all the ingredients. The ones having them can just add in the ingredients from the separate compartments of the lunch box come their break time.

You can find them all at Cold Storage. Yup, all the ingredients featured in this quick fix meal episode can be found under one roof. Pizza bases come in different sizes, brands and price tags. :moneyflies: I only wanted to buy the cheapest. You can find them together with those ready-made pizzas in flat-packed boxes in the freezer section.. yes, usually where the potato wedges are.. where the roti pratas are too..

The focaccia at the bread section. Looks like this..

Smells heavenly even from the outside. Yup... bursting with rich flavour kinda aroma.

I use the Tamanoi Instant Sushi Seasoning, Sushi Powder Vinegar (cos am lazy to supervise my maid šŸ˜‚ ) bought from Isetan supermarket. It comes in packet, about palm size, packet is in orange color. There is another brand in yellow packet about the same size.

A packet is for 4 cups of rice (before cooked).

Sprinkle while mixing with hands (wearing disposable gloves), I prefer to do when the rice is cold, it's easier on the hand and also help to determine the rice stickiness, the vinegar will make the rice less sticky and harder to roll the sushi, California roll would be no problem.

It's pre mixed with sugar and salt, easier for me cos my girls like the taste.

There is another brand, not sure of the name, in yellow packet, a bit more sour... not well received by my girls.

Hope this helped, enjoy rolling your sushi.... try the exotics, eg, Char siew or Peking duck šŸ˜‚
