        Buds, which type of beef u use in the stew?

        The other day, I bou the for stewing type. Very dry after 7 hours of cooking leh. Not nice at all.

        I don't buy for stewing type. I normally buy the tenderest part. Easier for cooking, less veiny.. and easier for the kiddies to eat.. should be tenderloin. I slice thinly so it cooks faster and absorbs flavours as quickly too. Great for stirfry as well for beef guo tiao. Too chewy, hard for everyone in my house to eat. But that's a personal preference.

          Finally has time to kapo on what is for dinner, had been so busy last few days! Boys do not want to dine out but requested me to cook their favourite porridge and volunteer to wash the dishes.


          Mix Fish cake, beancurd and 腰肉丸 when porridge is almost done. add pinch of pepper! Easy Peasy!
          I have tried porridge cooked with silver fish (tiny & white in colour that can be used to fried eggs) fish cake & minced meat instead of beancurd. Very nice. Maybe you want to give it a try.

            If you don't mind the cost of it and that it is not that lean, try getting beef brisket. I like to use oxtail but will first trim off all the visible fats.

            Otherwise, for the normal stewing chunks, think stew for about 3-4 hours will do. 7 hours will make the meat dry and flaky.

              Yup, chunks takes a heck of a long time.


              But for dishes that require chunks really bo pian.

                Jennifer, i normally cook beef under small fire only. More to simmer mode for 1-2 hours. Never large fires. Could it be that’s why yours was dry?

                      I cook in slow cooker, low for 7 hours the previous time. The soup was flavourful, but the beef pieces CMI.

                      My thermos pot came last week, hv to treat it first before using. Maybe using Thermos pot will hv a nicer texture.

                      My younger boy likes his carrot soft, if I were to cook for 1-2 hours only, the carrots will not be soft enough.

                      Need to re-think how I cook beef stew.

                        :scared: what kind of carrots you using. 1-2hours and the carrots still not soft enough?

                        Maybe you cook them in stages. start with the carrots for an hour first then add the beef for another hour or so followed by the potatoes and other veg.
