All kids hate them. Does yours? Mine finds it torturous to eat ladie's fingers. Dunno why....cos it is my favourite. Especially in curry fish head.

My boys like it! It is my favourite dish too. But my gal & DH hate it. So if I cook this dish, I have to prepare another dish for them.

My kids went through a few phases.

From eating veges to not eating to eating selected veges to wanting to try most veges.

Basic rule at the dining table, you eat whatever is served to you. And we will naturally make sure that there are veges that are easy on the kids palate, like spinach, broccoli, carrots, cabbage.

Since DH and I are trying to change our eating habits, we have been having mainly veges for dinner, usually in the form of salads and DD is also starting to much on raw veges which in the past she never did want to try.
Cant help to mention that he burger in your avatar looks yummy !!

          Lots of vege too ... šŸ˜„ šŸ˜„

Actually, I enjoy making sweet potato and eggplant crisps for my kids.

            What I usually do:

            1. thinly slice sweet potato and eggplant
            2. place baking paper on baking tray
            3. spread sweet potato and eggplant slices on baking tray
            4. drizzle with EVOO (extra virgin olive oil)
            5. sprinkle sea salt and a squeeze of lime (or lemon)
            6. add finely chopped oregano or rosemary (or any other herbs of your choice) - this step is optional. If lazy to finely chop the herbs, then just place a sprig of the herb over the sweet potato and eggplant
            7. put in oven and bake for about 20-30 mins until crisp

End result - it looks like Lays potato crisps. Tastes yummy and healthy.

Best of all, no slimy, gooey taste!!

                Hi Blueblue

It doesn't matter whether u use fresh or dried herbs. Some kids may not like a \"herby\" taste, so can omit the herbs if u wish.

Actually, I got the recipe from watching one of the Rachel Ray's shows. She uses a lot of EVOO in her cooking.

I've also heard that EVOO cannot take too high temperature/heat. Not sure what is the smoke point or base limit for olive oil, so I did a quick search online just now, and it said the smoke point is somewhere in the range of 180C to 240C before the health properties get destroyed.

Anyway, when I bake the sweet potatoes and eggplant, I usually set the temperature at 160C. It takes very little time to prepare and cook them. Must be fast to cook, good to eat!!

My kids don't really take vege and I try all sorts of creative ways to cook vege and make it interesting for them. :celebrate:

                    Hi Autumnbronze
Don't advise keeping. Best eaten on the spot for lunch/dinner. Also, I don't think it can be stored in an airtight container.

Anyway...me kids luuuvv it so much, there's always no left-overs!! šŸ˜Ž

Haha. Trust me it tastes yummy too. That's what you get when you order a burger from a cafe in the land of Oz.
