Me Time!

I notice we are eating lesser and lesser esp on the main meals nowadays..I used to cook side dishes but now even just a small pot of soup also cannot finish..they will just eat rice with soup..dont even want to eat meat..sometimes I just dunno what else to cook ...I cook fish I got to finish the whole plate..only salmon dd1 will eat most time but the last wk salmon as I didnt put it into her bowl, she finished half a lemon but fish intact..ended I finished it also. Chicken, all of us quite scared already..I used chicken to boil soup difficult to cook with other receipes as kids just dont like..nutrition wise I guess no problem as almost every day they have milk and 2 or 3 types of fruits..now I still haven't cook for them..still thinking..probably noodle or just fry rice later..I ate a packet of curry instant noodle, 4 sausages (now feeling so  ) plus an egg..I think I can just pick up some snacks later on and skip dinner liao.

Now DH and myself trying to reduce our intake of rice. I will also add brown rice with white rice when cooking. So far so good... -

Hi phtthp
hi joyymum, how u make the chicken feet soft ? u buy frozen chicken feet or non-frozen ?
I don’t buy chicken feet from supermarket.
I try to buy fresh meat and chicken from wet market. Lucky the usual stall which I bought from auto chop away the chicken feet nails for me otherwise I won’t buy
Add the chicken feet together with the pork ribs to boil with lotus root or radish (whichever u prefer). Few hours and the feet will be soft. I use slow cooker so you don’t have to watch the fire over the stove.
Add red dates, dry scallops & pork ribs the soup will be very tasty. No salt needed. Mine is always sweet and flavourful and when added home made meatball will be even nicer.
For me, I always blanch the pork ribs and chicken feet before I start cooking the soup... not sure about others -

You bring to boil yr water before adding chicken feet & then turn fire small to continue to water cooking yr chicken feet or pork bones. Chicken feet gets soften & comes off bones within an hour. All the helpers I train didn’t know this & wld always be boiling soup in high fire fr start till end & I’ll explain very detail so they know not only don’t help boil good stock but waste gas/electricity.
I always try to throw in a few pieces of dried fish, cuttlefish or dried scallops, unless u are making soup that alr hv onions or red dates type. These makes sweet tasty soup. Usual recipes that goes with lotus roots are red dates, lotus seeds & wolfberry in 适量就好. ABC simple soup with onion, carrots, celery, potatoes or tomatoes I’ll put in ikan billis. The rich oxtail soup also requires onion for natural sweetness besides tomatoes & carrots but slow fire for more than 5 hours to get yr oxtail soften. -
Hmm I will avoid cuttlefish thou I know the soup will taste very nice as we think cuttlefish is 毒 my DH don’t like
Adding cuttlefish is like drinking soup from restaurants… -
now when I cook chicken, I took off all skin…healthier and easier cleaning…oh is it homemade meatball in soup arh…maybe I try…but doubt they like it…as homemade meatball usually used to cook soup for mee hoon kuay/noodles…I bought chinese herbs in big packets…so when cook I take few pieces from each…yes kids like those soups…like old cucumber, abc, radish, lotus roots…those what we usually cook, they like…in fact that is what we mostly eating now…I used to like chicken feet but not really now as I find getting sick with chicken which used to be my favourite when young…few times I was thinking of using black chicken for herbal soups instead…dangshen, wolfberry, red dates all good hor I hope…now I even increase my danggui pian to 3 pieces…even for kids , usually will have chi herbs soup at least 2times a week and kids look like no problem taking danggui too.

I seldom put dried cuttlefish/scallop in soup…I bought those dried ones few packets online…very difficult to finish.
