Tips for frying rice/ bee hoon.

I think I'd give bebe's suggestion a try by mixing the bee hoon with oil before fryingt, cos I remember seeing it somewhere this was done.
To remove the burnt stuff from the base of the wok, simply add some water and boil till it becomes soft so easier to scrape off. Using baking soda to wash the wok helps to remove whatever stains that's left behind.
I tried using medium heat before, the bee hoon/rice did not turn out as tasty compared to using big fire.
Usually, I buy canned gulong/mili pork leg with mushroom to fry my bee hoon with some veg added. For fried rice, I use luncheon meat or ham.
Not very creative hor, care to share your recipes?

for me, i always use 'overnight' rice or slightly drier rice for my fried rice.. and when i add in the liquid stuff, i add bit by bit, onto the wok (instead of rice, surrounding the rice).. so it seeps to the bottom, and stir vigorously.. so far, it's not sticky.. same for beehoon.. don add too much stock at one go..
has anyone tried frying hor fun or noodles at home? the kind we buy fr the wet market? it's always v oily when we buy it, do we have to wash first? :? -

For hor fun, how to fry the kway teow so that it is not soft, but kind of bouncy and chewy. I love this texture, but even zichar stalls canβt produce this kind of results.

Pardon my ignorance as i m learning to cook. What is stock with seasoning means? Can someone help to explain in details? Iβm trying to cook fried bee hoon. -

Stock with seasoning means you add salt or soy sauce to the chicken/pork stock you boiled. Meat/vegetable stock on its own is not salty or flavorful enough. You need to add seasoning - salt, soy sauce, sugar, pepper, spices etc. If not making your own stock, just buy Swanson's or Heinz chicken stock. An alternative is to open a can of pork trotters and add it in.Hi,

Just sharing our style of fried beehoon. You might want to try to see if it suit your taste.
Ingredients:
Chilli brand beehoon
Narcissus brand stewed pork chops
chye sim
bit of dark soya sauce
The way to cook is the same but just different in some of the ingredients used. Ours is simplier but we like to eat it this way.
